Traditional Sopa de Espinafres Recipe: A Comforting Spinach Soup

Sopa de espinafres is a beloved Portuguese spinach soup that brings warmth and nourishment to the table with minimal effort. Velvety, vibrant, and gently seasoned, this dish transforms simple ingredients into a comforting bowl that suits any season. Whether you serve it as a light lunch or a starter before a larger meal, this recipe delivers authentic flavor without complexity. Fresh spinach, potatoes, and a touch of olive oil come together in a soup that feels both wholesome and satisfying.

Sopa de Espinafres - Receita Natureba

This version highlights the natural sweetness of spinach balanced by savory garlic and creamy potatoes. The result is a smooth, bright green soup that looks as inviting as it tastes. A drizzle of olive oil at the end adds a silky finish.

• 2 tablespoons olive oil
• 1 medium onion, finely chopped
• 2 garlic cloves, minced
• 3 medium potatoes, peeled and cubed
• 5 cups vegetable or chicken broth
• 7 cups fresh spinach leaves, washed
• Salt and black pepper to taste
• Pinch of nutmeg (optional)
• Extra olive oil for serving

1. Heat the olive oil in a large pot over medium heat. Add the onion and cook until soft and translucent, about 5 minutes.
2. Stir in the garlic and cook for 1 minute until fragrant.
3. Add the cubed potatoes and broth. Bring to a boil, then reduce the heat and simmer for 15 to 20 minutes, until the potatoes are tender.
4. Add the spinach leaves and cook for 3 to 4 minutes, until wilted.
5. Remove the pot from the heat and blend the soup until completely smooth using an immersion blender or a countertop blender.
6. Season with salt, pepper, and a pinch of nutmeg if desired. Return to low heat to warm through.
7. Serve hot with a drizzle of olive oil over each bowl.

Sopa de espinafres

For a heartier variation, leave a few potato chunks unblended or stir in a handful of cooked white beans before serving. A squeeze of lemon juice brightens the flavor, while a sprinkle of fresh herbs adds freshness. This soup keeps well in the refrigerator for up to three days and reheats beautifully, making it a practical choice for meal preparation.

• 1 tablespoon butter or extra olive oil
• 1 small leek, sliced (optional)
• 4 cups spinach, tightly packed
• 2 potatoes, diced
• 4 cups water or stock
• Salt, pepper, and lemon juice to taste

1. Melt the butter in a saucepan and sauté the leek until softened.
2. Add the potatoes and stock, then simmer until the potatoes break apart easily.
3. Stir in the spinach and cook until just wilted.
4. Blend until smooth, then adjust the consistency with additional hot water if needed.
5. Season with salt, pepper, and a few drops of lemon juice.
6. Ladle into bowls and serve immediately.

Both versions capture the essence of this traditional dish: simple, nourishing, and full of green goodness. Serve sopa de espinafres with crusty bread for a complete and comforting meal.
