Cuban fried rice, known as arroz frito cubano, is the kind of dish that transforms yesterday's leftovers into something deeply satisfying. It draws on the island's Chinese-Cuban culinary heritage, blending soy sauce, garlic, and smoky ham with the vibrant rhythm of Caribbean seasoning. This version is unapologetically rich and savory, with a dark, almost mahogany finish from the soy and a depth that comes from properly caramelized sofrito. It is not a delicate dish, and it is not meant to be. Serve it hot, straight from the wok or a heavy skillet, with a fried egg on top if you want to push it over the edge. The whole thing comes together in under half an hour, which makes it an ideal weeknight dinner when you want something with real character.
This is the foundational version: cold day-old rice, diced ham, sweet peas, and a sofrito built on garlic, onion, and bell pepper. The key is to let the rice sit undisturbed in the hot pan long enough to develop a slight crust before you start tossing it. That contrast between the crisp edges and the tender interior is what separates a good arroz frito from a soggy one. Use long-grain rice that has been chilled overnight; fresh rice will steam and clump instead of frying.
This second preparation leans harder into the island's pantry, adding a touch of dry sherry, a pinch of smoked paprika, and a handful of diced cooked shrimp if you have them. The result is a darker, more complex plate with layers of sweetness and smoke. The technique remains the same, but the timing adjusts slightly to accommodate the extra moisture from the sherry. Keep the heat high and keep the rice moving once the liquid goes in, so it evaporates fast and coats every grain rather than soaking in.
Both versions reward the same discipline: high heat, cold rice, and a willingness to let the pan do its work before you start stirring. The darker, smokier profile of the second recipe pairs especially well with fried plantains and a cold beer, while the first is a cleaner, more everyday plate that comes together from what you likely already have on hand. Either way, this is Cuban fried rice at its most unapologetic.
