How to Make Juicy Coxa e Sobrecoxa de Frango: 2 Easy Brazilian Recipes

There's something about chicken thighs and drumsticks that just feels like home to me. They're forgiving, packed with flavor, and somehow always turn out juicy even when I'm distracted in the kitchen. Whether you're cooking for a busy weeknight or a lazy Sunday lunch, these two recipes for coxa e sobrecoxa de frango have become my go-to favorites. One is a comforting oven-baked classic with crispy skin, and the other pairs the chicken with colorful vegetables for a complete one-pan meal. Let me walk you through both, exactly the way I make them at home.

Baked Chicken Thighs and Drumsticks: Simple and Delicious

Golden baked chicken thighs and drumsticks on a serving plate

This is the recipe I reach for when I want something foolproof. The chicken gets a garlicky, smoky rub, and the oven does the rest. The skin turns beautifully golden while the meat stays tender and juicy underneath. It's the kind of dish that makes the whole house smell amazing.

4 chicken thighs
4 chicken drumsticks
4 garlic cloves, minced
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon dried oregano
Juice of 1 lemon
Salt and black pepper to taste
Fresh parsley, chopped, for garnish

Preheat your oven to 400°F (200°C).
Pat the chicken pieces dry with paper towels — this helps the skin crisp up.
In a small bowl, mix the minced garlic, olive oil, smoked paprika, oregano, lemon juice, salt, and pepper.
Rub the mixture all over the chicken, making sure to get some under the skin too.
Arrange the pieces on a baking sheet or roasting pan, skin side up.
Bake for 40 to 45 minutes, until the skin is golden and the internal temperature reaches 165°F (74°C).
Let the chicken rest for 5 minutes, sprinkle with fresh parsley, and serve.

Chicken Thighs and Drumsticks with Vegetables

Chicken thighs and drumsticks roasted with carrots, potatoes, and bell peppers

When I want dinner to be a single pan from start to finish, this is the recipe. The vegetables soak up all the chicken juices and seasoning, and everything comes out of the oven caramelized and delicious. It's hearty, colorful, and perfect for feeding a hungry family.

4 chicken thighs
4 chicken drumsticks
3 medium potatoes, cut into wedges
2 carrots, sliced into thick rounds
1 red bell pepper, sliced
1 onion, cut into wedges
3 tablespoons olive oil
1 teaspoon sweet paprika
1 teaspoon dried thyme
3 garlic cloves, minced
Salt and black pepper to taste

Preheat the oven to 400°F (200°C).
Season the chicken with salt, pepper, paprika, thyme, and half of the minced garlic.
In a large bowl, toss the potatoes, carrots, bell pepper, and onion with olive oil and the remaining garlic.
Spread the vegetables in a single layer in a large roasting pan.
Place the chicken pieces on top of the vegetables, skin side up.
Roast for 50 to 55 minutes, until the chicken is cooked through and the vegetables are tender and browned at the edges.
Let everything rest for a few minutes before serving straight from the pan.

Both of these dishes have earned a permanent spot in my rotation, and I love how flexible they are — swap the spices, add whatever vegetables you have on hand, or double the batch for leftovers. Give them a try, and I think they'll become favorites in your kitchen too.
