Easy Frango no Forno Recipes: 5 Delicious Ways to Bake Chicken in the Oven

There's something deeply comforting about pulling a golden, fragrant dish of chicken out of the oven on a weeknight. Frango no forno — oven-baked chicken — is one of those meals I come back to again and again, and I love how forgiving it is. You can dress it up with smoky paprika and lemon, keep it simple with garlic and olive oil, or load it with potatoes and herbs so the whole dinner comes together in one pan. Over the years, I've collected a handful of go-to versions that never disappoint, and I'm excited to share them with you here. Whether you're cooking for a busy family or planning a lazy Sunday lunch, these recipes are straightforward, budget-friendly, and packed with flavor. Grab your favorite roasting tray, preheat that oven, and let's get cooking.

Classic Weeknight Frango no Forno with Lemon and Garlic

This is the version I make most often, and it's the one that taught me how simple frango no forno can be. The chicken comes out juicy inside with beautifully crisp skin, and the lemon-garlic juices at the bottom of the pan are perfect for spooning over rice or crusty bread. It takes about ten minutes of hands-on work and then the oven does the rest — my kind of dinner.

1 whole chicken, cut into pieces (or 6 bone-in thighs)
4 garlic cloves, minced
Juice and zest of 1 lemon
3 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon dried oregano
Salt and black pepper to taste
1 onion, sliced into rings
Fresh parsley for garnish

Preheat your oven to 400°F (200°C).
Pat the chicken pieces dry with paper towels — this helps the skin crisp up.
In a small bowl, mix the garlic, lemon juice, lemon zest, olive oil, paprika, oregano, salt, and pepper.
Rub the mixture all over the chicken, getting some under the skin for extra flavor.
Scatter the onion rings across the bottom of a roasting tray and arrange the chicken on top.
Bake for 40 to 45 minutes, until the skin is golden and the juices run clear.
Let the chicken rest for 5 minutes, sprinkle with parsley, and serve with the pan juices.

One-Pan Frango no Forno with Potatoes and Herbs

Roasted chicken thighs with potatoes, rosemary, and a golden herb crust in a baking dish

When I want a complete meal with minimal washing up, this is my answer. The potatoes soak up all the savory chicken juices and turn wonderfully tender on the inside with crispy edges. I usually toss in a few rosemary sprigs from the garden, but dried herbs work just as well if that's what you have on hand.

6 chicken thighs, bone-in and skin-on
4 medium potatoes, cut into wedges
1 red onion, cut into wedges
3 tablespoons olive oil
2 garlic cloves, sliced
1 teaspoon dried rosemary (or 2 fresh sprigs)
1 teaspoon sweet paprika
1/2 teaspoon chili flakes (optional)
Salt and black pepper to taste
1/2 cup dry white wine or chicken stock

Preheat the oven to 400°F (200°C).
Toss the potato wedges and onion with half the olive oil, salt, and pepper, then spread them in a large baking dish.
Season the chicken thighs with paprika, rosemary, chili flakes, salt, and pepper, and nestle them among the potatoes.
Scatter the sliced garlic over everything and drizzle with the remaining olive oil.
Pour the wine or stock around the edges of the dish to keep everything moist.
Roast for 45 to 50 minutes, turning the potatoes once halfway through, until the chicken is cooked through and the potatoes are golden.
Rest for a few minutes before serving straight from the dish.
