Blackened KFC-Style Fried Chicken Recipe: Crispy, Juicy, and Bold

There is something deeply satisfying about biting into fried chicken with a shatteringly crisp crust and a juicy, flavorful interior. This recipe brings that experience home with a bold, deeply seasoned twist on the classic KFC-style fried chicken. The coating is dark, craggy, and packed with spices, while the meat stays tender and succulent. Whether you are cooking for a weekend feast or a comforting weeknight dinner, this recipe delivers serious crunch and rich flavor. Grab your apron, heat your oil, and get ready to make fried chicken that looks as dramatic as it tastes.

Crispy Golden KFC-Style Fried Chicken

This first stage focuses on building the signature craggy coating. The chicken pieces are seasoned thoroughly, then dredged in a spiced flour mixture that clings in rough, uneven flakes. That texture is exactly what creates the deep, crunchy bite associated with classic fried chicken. Let the coated pieces rest for a few minutes before frying so the flour hydrates and stays put in the hot oil.

• 2 pounds bone-in chicken pieces (drumsticks, thighs, wings)
• 2 cups all-purpose flour
• 1 tablespoon smoked paprika
• 1 tablespoon garlic powder
• 1 tablespoon onion powder
• 2 teaspoons black pepper
• 1 teaspoon cayenne pepper
• 1 teaspoon dried oregano
• 1 teaspoon salt, plus more for seasoning
• 2 large eggs
• 1 cup buttermilk
• Vegetable oil, for frying

1. Pat the chicken pieces dry and season them generously with salt and a pinch of black pepper.
2. In a large bowl, whisk together the flour, smoked paprika, garlic powder, onion powder, black pepper, cayenne, oregano, and salt.
3. In a separate bowl, beat the eggs with the buttermilk until smooth.
4. Dip each chicken piece into the buttermilk mixture, then press it firmly into the seasoned flour, turning to coat all sides.
5. Double-dredge for extra crunch: dip the coated pieces back into the buttermilk and then into the flour once more, pressing the coating on firmly.
6. Place the coated chicken on a wire rack and let it rest for 10 minutes while the oil heats.
7. Heat about 2 inches of vegetable oil in a heavy pot to 350°F (175°C).
8. Fry the chicken in batches, without crowding, for 12 to 16 minutes, turning occasionally, until deeply golden and cooked through to 165°F (74°C).
9. Drain on a wire rack or paper towels and sprinkle with a little extra salt while hot.

Homemade KFC-Style Fried Chicken Close-Up

This close-up shows the reward of careful dredging: a rugged, well-seasoned crust with deep color and plenty of texture. Serve the chicken hot with pickles, biscuits, or a creamy dipping sauce. If you want to keep the crust at its best, avoid covering the pieces tightly, since trapped steam softens the coating. A brief rest on a rack keeps the exterior crisp while the juices settle inside the meat.

• 1 teaspoon cayenne pepper, for extra heat if desired
• 1 teaspoon mustard powder
• 1 teaspoon celery salt
• 1/2 teaspoon ground ginger
• Freshly ground black pepper, to taste
• Flaky sea salt, for finishing
• Pickles and dipping sauce, for serving

1. Add the cayenne, mustard powder, celery salt, and ground ginger to the flour mixture for a deeper, more complex flavor.
2. Adjust the seasoning with freshly ground black pepper and taste a small pinch of the dry coating to check the balance.
3. After frying, finish each piece with a light sprinkle of flaky sea salt.
4. Serve immediately with pickles and your favorite dipping sauce, and enjoy while the crust is at its crispiest.
