Spinach Soup Recipe: The Green Bowl That Will Make You Popeye Proud

Ah, spinach soup. The dish that convinces your taste buds you're being healthy while secretly tasting like comfort in a bowl. If you've ever stared at a bag of spinach wilting in your fridge and thought, "Well, this is my life now," fear not — this recipe turns that sad little bag into a velvety, dreamy, "I totally know what I'm doing in the kitchen" masterpiece. Grab your pot, put on your favorite apron (or pajamas, no judgment), and let's turn leafy greens into liquid gold.

Sopas e Caldos Saudáveis – The Greenest Soup You'll Actually Crave

This is the soup that looks like you did yoga this morning and actually meant it. Bright, fresh, and packed with everything your body has been politely asking for after that third slice of cake. It's smooth, it's hearty, and it's the perfect excuse to eat bread with "because it's soup, it doesn't count."

• 2 tablespoons olive oil
• 1 medium onion, chopped
• 2 garlic cloves, minced
• 2 medium potatoes, peeled and cubed
• 4 cups fresh spinach, washed
• 4 cups vegetable stock
• 1/2 cup milk or cream (optional, for extra creaminess)
• Salt and black pepper to taste
• A pinch of nutmeg (trust the process)

1. Heat the olive oil in a large pot over medium heat and sauté the onion until it turns soft and golden — about 5 minutes of your life well spent.
2. Add the garlic and cook for another minute, just until your kitchen starts smelling like a five-star restaurant.
3. Toss in the potatoes and vegetable stock. Bring to a boil, then lower the heat and simmer for 15 minutes until the potatoes are fork-tender.
4. Add the spinach and cook for 3 to 4 minutes, until it wilts dramatically like a tiny green diva.
5. Blend everything until completely smooth using an immersion blender. If you don't have one, a regular blender works — just be careful, hot soup has opinions.
6. Stir in the milk or cream if using, season with salt, pepper, and nutmeg, and simmer for 2 more minutes.
7. Serve hot, preferably with crusty bread you'll pretend not to finish entirely.

15 Creamy and Cozy Soup Recipes – Because One Bowl Is Never Enough

Feeling fancy? This version takes the classic spinach soup and adds pasta, because carbs are not the enemy — they're the supportive friend holding the soup together. It's the kind of dish that makes you feel like a Portuguese grandmother, even if your cooking experience so far has been limited to toast.

• 2 tablespoons olive oil
• 1 onion, finely chopped
• 2 garlic cloves, crushed
• 2 potatoes, diced
• 6 cups water or vegetable stock
• 1 cup small pasta (like orzo or small shells)
• 3 cups fresh spinach
• Salt, pepper, and a drizzle of olive oil for serving

1. In a large pot, heat the olive oil and sauté the onion and garlic until fragrant and soft.
2. Add the diced potatoes and the water or stock. Bring to a boil and simmer for 15 minutes.
3. Blend the soup until smooth, then return it to the pot and bring back to a gentle simmer.
4. Add the pasta and cook according to the package instructions, usually around 8 to 10 minutes — stir occasionally so it doesn't stick together like awkward party guests.
5. Stir in the spinach and cook for 3 minutes more, until wilted and bright green.
6. Season with salt and pepper, drizzle with olive oil, and serve immediately while dreaming of sunny terraces you've never actually visited.
