Easy Copycat KFC Fried Chicken Recipe You Can Make at Home

There is something about that crispy, golden fried chicken from KFC that just hits the spot every single time. I remember the first time I tried to recreate it in my own kitchen — I was convinced it would be impossible to match that signature crunch. But after a few trials (and a couple of happy taste testers), I landed on a version that comes surprisingly close. This is the recipe I keep coming back to whenever a craving strikes, and I think you'll love it too.

The Secret Is in the Seasoning

What makes this fried chicken stand out is the blend of eleven spices that seasons the flour coating. You probably already have most of them in your pantry. The buttermilk marinade is the other key player — it keeps the chicken juicy on the inside while the outside turns shatteringly crisp. Take your time with the seasoning and don't skip the double dredge; that is where the magic happens.

• 8 chicken pieces (drumsticks and thighs work great)
• 2 cups buttermilk
• 2 cups all-purpose flour
• 1 tablespoon paprika
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1 teaspoon dried oregano
• 1 teaspoon dried basil
• 1 teaspoon salt
• 1 teaspoon black pepper
• 1/2 teaspoon cayenne pepper (optional, for a little heat)
• 1 teaspoon celery salt
• 1 teaspoon mustard powder
• 1 teaspoon ground ginger
• Vegetable oil for frying

Getting That Signature Crunch

Frying at the right temperature is everything. If the oil is too cool, the chicken soaks up grease; too hot, and the outside burns before the inside cooks through. I like to keep my oil around 325°F and fry in small batches so the temperature stays steady. Let the chicken rest on a wire rack after frying so the crust stays crisp instead of turning soggy.

1. In a large bowl, soak the chicken pieces in buttermilk for at least 2 hours, or overnight in the fridge for the best flavor.
2. In a separate bowl, whisk together the flour, paprika, garlic powder, onion powder, oregano, basil, salt, black pepper, cayenne, celery salt, mustard powder, and ginger.
3. Heat about 2 inches of vegetable oil in a heavy skillet or Dutch oven to 325°F.
4. Take each chicken piece from the buttermilk, letting the excess drip off, then press it firmly into the flour mixture. Dip it back into the buttermilk and dredge once more in the flour for an extra-thick crust.
5. Carefully place the coated pieces into the hot oil, working in batches of three or four so the oil temperature does not drop too much.
6. Fry for about 12 to 15 minutes, turning occasionally, until the crust is deep golden brown and the internal temperature reaches 165°F.
7. Transfer the fried chicken to a wire rack lined with paper towels and let it rest for a few minutes before serving.
8. Serve warm with your favorite sides — mashed potatoes, coleslaw, or a simple biscuit all work beautifully.
