Winner Winner Brazilian Chicken Rice Dinner: A Foolproof Frango com Arroz Recipe

Somewhere between "I can totally cook" and "please, someone feed me" lies the beautiful, comforting, gloriously simple world of frango com arroz — Brazilian chicken and rice. It's the dish your avó made, the one that fills the kitchen with smells so good the neighbors get jealous, and the one that somehow tastes even better the next day. Whether you're a kitchen rookie who burns toast or a seasoned pro who owns three spatulas for no reason, this recipe is here to make you look like a culinary genius with minimal effort and maximum flavor. Grab your biggest pot, put on your "I mean business" apron, and let's turn chicken and rice into the dinner of the year.

The Golden Start: Chicken That Means Business

Every great frango com arroz begins with chicken that's been properly loved — and by loved, we mean seasoned like you actually care. This first stage is where the magic starts: golden, fragrant, and promising. Get the chicken browned and the onions sweating, and you're already 70% of the way to greatness. The remaining 30% is patience, which unfortunately cannot be bought at the grocery store.

2 lbs (900 g) chicken thighs and drumsticks (bone-in for flavor, boneless if you're feeling lazy)
3 cloves garlic, minced — more if you fear blandness, and you should
1 large onion, finely chopped
2 tbsp olive oil
1 tsp paprika
Salt and black pepper to taste
1 bay leaf (it's just one leaf, but it acts like it owns the place)

Pat the chicken dry and season generously with salt, pepper, and paprika. Yes, generously. Bland chicken is a crime.
Heat the olive oil in a large pot over medium-high heat and brown the chicken on all sides until golden. Remove and set aside — it's not done, it's just resting dramatically.
In the same pot, sauté the onion until soft and translucent, then add the garlic and stir for about a minute until fragrant.
Return the chicken to the pot, add the bay leaf, and let everything get cozy for a couple of minutes.

The Rice That Steals the Show

Now comes the rice — the unsung hero that soaks up all that chicken flavor and quietly becomes the best part of the meal. Toasted in the pot with the aromatics, simmered to fluffy perfection, it emerges triumphant. This is the moment your kitchen officially smells like a Brazilian grandmother's house, and honestly, there's no higher compliment.

2 cups long-grain white rice, rinsed
4 cups hot chicken broth (or water plus a bouillon cube, no judgment)
1 tomato, diced (optional, but it adds a nice touch)
2 tbsp chopped fresh parsley or cilantro
Extra salt to taste

Push the chicken to one side of the pot and add the rinsed rice, toasting it for 1–2 minutes with the onions and garlic until the grains look slightly translucent.
Pour in the hot broth, add the diced tomato, and stir everything together. Season with a little salt — remember the broth may already be salty.
Bring to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes without peeking. Every time you lift the lid, a rice grain loses its dream.
Remove from heat and let it rest, covered, for 5 minutes. Fluff with a fork, sprinkle with parsley, and serve while basking in the applause.
Store leftovers in the fridge — tomorrow's you will be extremely grateful.
