A Simple Chicken in Sauce to Begin

This first look shows just how approachable this dish is: golden chicken pieces resting in a glossy, fragrant sauce. The key is to sear the chicken first so it develops color and flavor, then let it simmer gently in the sauce so every bite stays juicy. The sauce thickens naturally as it cooks, clinging to the chicken in the most appetizing way. It is proof that simple ingredients, handled with care, can create something truly memorable.

700 g (about 1.5 lb) boneless chicken thighs or breasts, cut into bite-sized pieces
2 tablespoons soy sauce
1 tablespoon oyster sauce (optional, for extra depth)
1 teaspoon sesame oil
1 tablespoon cornstarch mixed with 3 tablespoons water (slurry)
2 cloves garlic, finely minced
1 teaspoon freshly grated ginger
1 small onion, thinly sliced
1 cup chicken broth or water
1 teaspoon sugar
1 tablespoon cooking oil
Salt and white pepper to taste
Chopped scallions and toasted sesame seeds, for garnish

Pat the chicken pieces dry and season lightly with salt and white pepper. In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, and sugar to make the sauce base.
Heat the cooking oil in a wok or large skillet over medium-high heat. Add the chicken in a single layer and sear for 3 to 4 minutes per side until golden. Remove and set aside.
In the same pan, add the onion and cook for 2 minutes until softened. Stir in the garlic and ginger and cook for 30 seconds until fragrant.
Pour in the sauce base and the chicken broth, then return the chicken to the pan. Bring to a gentle simmer.
Cover and cook for 8 to 10 minutes, until the chicken is cooked through and tender.
Stir the cornstarch slurry once more, then pour it into the pan. Cook uncovered for 2 to 3 minutes, stirring, until the sauce thickens and coats the chicken.
Taste and adjust the seasoning. Garnish with scallions and sesame seeds, then serve hot with steamed rice.

Serve It Suculento and Full of Flavor

The finished dish is succulent, savory, and beautifully balanced. The sauce should be thick enough to cling to the chicken yet loose enough to spoon generously over rice. If you like a little heat, a pinch of chili flakes or a drizzle of chili oil at the end adds a lovely kick. Leftovers keep well in the refrigerator for a couple of days and reheat gently with a splash of water. This is simple Asian-inspired comfort food at its best, ready to become a regular at your table.
