Creamy Spinach Soup Recipe: A Comforting Brazilian Classic Made Easy

If you're looking for a dish that warms you from the inside out, this creamy spinach soup is exactly what you need. Inspired by the beloved Brazilian creme de espinafre, this recipe transforms simple everyday ingredients into a silky, vibrant bowl of comfort. It's the kind of meal that feels indulgent but is actually packed with nutrients, thanks to fresh spinach, garlic, and a touch of cream. Whether you're serving it as a cozy weeknight dinner or an elegant starter for guests, this soup delivers on flavor and simplicity. Best of all, it comes together in about 30 minutes with minimal effort. Let's dive into this crowd-pleasing recipe that will quickly become a staple in your kitchen.

Why This Creamy Spinach Soup Deserves a Spot on Your Table

This version of creamy spinach soup is proof that healthy food can be downright luxurious. The spinach lends a gorgeous emerald color and a mild, earthy flavor that pairs beautifully with sautéed onion and garlic. A little cornstarch or flour thickens the broth without heaviness, while a splash of heavy cream at the end gives it that restaurant-quality richness. Serve it with crusty bread or a sprinkle of parmesan, and you've got a meal that feels special any day of the week.

• 2 tablespoons unsalted butter (or olive oil)
• 1 medium onion, finely chopped
• 3 cloves garlic, minced
• 2 tablespoons all-purpose flour (or cornstarch for a gluten-free option)
• 4 cups vegetable or chicken broth
• 1 pound fresh spinach, washed and stems removed (or 10 oz frozen spinach, thawed)
• 1 cup heavy cream (or whole milk for a lighter version)
• Salt and black pepper, to taste
• Pinch of freshly grated nutmeg (optional)
• Grated parmesan or croutons, for serving

Step-by-Step Instructions for the Perfect Bowl

Making this soup is straightforward, and the result is a velvety, flavorful bowl that tastes like it took hours. The key is to cook the flour briefly to remove its raw taste and to blend the soup until completely smooth. Follow these steps for a flawless creme de espinafre every time.

1. In a large pot, melt the butter over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.
2. Stir in the minced garlic and cook for 30 seconds until fragrant, being careful not to burn it.
3. Sprinkle the flour over the onions and garlic, stirring constantly for 1 minute to coat and lightly toast the flour.
4. Gradually pour in the broth, whisking continuously to prevent lumps. Bring the mixture to a gentle simmer.
5. Add the fresh or thawed spinach, stir well, and cook for 5 to 7 minutes until the spinach is fully wilted and tender.
6. Remove the pot from the heat. Using an immersion blender, blend the soup until completely smooth and creamy. (Alternatively, transfer in batches to a countertop blender.)
7. Return the pot to low heat and stir in the heavy cream. Season with salt, pepper, and a pinch of nutmeg if desired. Warm gently without boiling.
8. Ladle into bowls and top with grated parmesan or crunchy croutons. Serve immediately and enjoy!
