Fudgy Single-Serve Brownie Recipe: A Deep, Dark Chocolate Fix for One

There are nights when a full tray of brownies is simply too much temptation and not enough restraint. This single-serve brownie recipe delivers everything you crave in a fraction of the size: a crackly top, a dense and fudgy center, and a deep, almost bitter chocolate intensity that lingers on the palate. Baked in a small ramekin or mini pan, it comes together in minutes with pantry staples and requires no special equipment beyond a bowl and a whisk. The result is a brooding, richly colored square of chocolate pleasure, best eaten warm with a fork while it is still molten in the middle.

Single-Serve Brownie With an Intense Cocoa Crumb

Single-serve brownie with a crackly top on a dark surface

This is the foundational version: one ramekin, one spoon, one deeply satisfying dessert. The cocoa is bloomed briefly so the flavor turns darker and rounder, and the center stays just shy of set for that unmistakable fudgy pull. It is the kind of recipe worth memorizing, because a craving should never require a whole batch.

3 tablespoons all-purpose flour
2 tablespoons unsweetened dark cocoa powder
3 tablespoons granulated sugar
1/8 teaspoon fine salt
2 tablespoons unsalted butter, melted
2 tablespoons whole milk
1/4 teaspoon vanilla extract
2 tablespoons dark chocolate chips

Heat the oven to 350°F and lightly butter a small ramekin.
Whisk the flour, cocoa, sugar, and salt together until no cocoa lumps remain.
Stir in the melted butter, milk, and vanilla until the batter is thick and glossy.
Fold in the chocolate chips, reserving a few for the top.
Scrape the batter into the ramekin and press the reserved chips lightly into the surface.
Bake for 14 to 17 minutes, until the edges are set but the center still looks slightly underdone.
Rest for 5 minutes, then serve warm.

A Darker, More Decadent Brownie for One

Homemade single brownie served in a small dish with a spoon

For a more shadowed, grown-up flavor, this variation leans on brown sugar and a pinch of espresso powder to amplify the cocoa without adding sweetness. The texture turns slightly chewier at the edges while remaining soft and molten within. Serve it barely warm, or chill it and eat it cold and dense like a truffle.

3 tablespoons all-purpose flour
2 tablespoons Dutch-process cocoa powder
2 tablespoons dark brown sugar
1 tablespoon granulated sugar
1/8 teaspoon fine salt
1/8 teaspoon espresso powder
2 tablespoons unsalted butter, melted and cooled
1 large egg yolk
1/2 teaspoon vanilla extract
2 tablespoons chopped bittersweet chocolate

Heat the oven to 350°F and line a small baking dish with parchment.
Whisk the flour, cocoa, both sugars, salt, and espresso powder in a bowl.
Beat the melted butter with the egg yolk and vanilla until smooth and slightly pale.
Add the dry ingredients to the wet and stir just until combined, then fold in the chopped chocolate.
Spread the batter evenly in the prepared dish.
Bake for 16 to 19 minutes, until the top is set and a skewer comes out with moist crumbs.
Cool for 10 minutes before lifting out and cutting into a single generous square.

Both versions reward a short rest before eating, allowing the structure to settle while the interior stays soft. Store any leftovers, though unlikely, tightly wrapped at room temperature for a day or refrigerated for three. A small scoop of cold cream or a dusting of cocoa on top balances the intensity and makes this modest portion feel like a complete, considered dessert.
