Blackened Chicken Breast with Crispy Potatoes: A Bold, Smoky Dinner Recipe

Some dinners are meant to be quiet and comforting, and others are meant to make a statement. This blackened chicken breast with crispy potatoes falls firmly into the second category. The chicken gets a deep,dark crust from a smoky spice blend seared hard in a cast-iron skillet, while the potatoes roast until their edges turn mahogany and shatter under a fork. Chicken breasts are seasoned deeply, nestled among halved baby potatoes, and roasted until the skin is burnished and the herbs have crisped against the pan. It is the kind of traybake that looks like you fussed, even though the oven did most of the work.

2 large chicken breasts, bone-in and skin-on
700 g baby potatoes, halved
3 tablespoons olive oil
4 garlic cloves, smashed
2 sprigs fresh rosemary, leaves stripped and chopped
1 teaspoon smoked paprika
1 teaspoon coarse black pepper
1 ½ teaspoons fine sea salt
½ teaspoon dried thyme
1 lemon, cut into wedges

Heat the oven to 220°C (425°F) and set a rack in the upper third.
Pat the chicken breasts completely dry, then rub them with one tablespoon of olive oil and season all over with the smoked paprika, black pepper, half the salt, and the thyme.
Toss the halved potatoes with the remaining olive oil, garlic, rosemary, and the rest of the salt, then spread them in a single layer in a large roasting pan.
Nestle the chicken among the potatoes, skin side up, and tuck the lemon wedges into the gaps.
Roast for 35 to 40 minutes, until the chicken registers 74°C (165°F) at the thickest point and the potatoes are deeply browned.
Rest the chicken for five minutes, then carve and serve with the potatoes and a squeeze of roasted lemon.

For nights when the oven feels like too much, the air fryer delivers the same deep color and crunch in a fraction of the time. The chicken stays remarkably moist thanks to a short marinade in oil and spices, while the potatoes get a rugged, crackling exterior that rivals any deep-fried version. Keep the pieces in a single layer and shake the basket halfway through; that movement is what builds the crust.

2 boneless, skinless chicken breasts, about 200 g each
500 g russet or Yukon gold potatoes, cut into 2 cm cubes
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
½ teaspoon cayenne pepper
1 teaspoon coarse salt, plus more for the potatoes
½ teaspoon cracked black pepper
1 tablespoon chopped fresh parsley, to finish

Soak the potato cubes in cold water for 10 minutes, then drain and dry them thoroughly with a clean towel.
Toss the potatoes with one tablespoon of olive oil and a pinch of salt, then air fry at 200°C (400°F) for 12 minutes, shaking the basket once.
Meanwhile, rub the chicken with the remaining oil, garlic powder, onion powder, smoked paprika, cayenne, salt, and black pepper until evenly coated.
Push the potatoes to one side, add the chicken in a single layer, and cook for 12 to 14 minutes, flipping the chicken halfway, until it reaches 74°C (165°F).
If the potatoes need more color, remove the chicken to rest and give the potatoes a final 3 to 4 minutes.
Slice the chicken, scatter the parsley over everything, and serve immediately while the crust is at its loudest.

Either way you cook it, the plate rewards you with the same thing: a dark, smoky crust giving way to tender meat, and potatoes that crunch before they melt. Serve it with something sharp—pickled onions, a squeeze of lemon, or a spoonful of mustard—and let the contrast do the talking.
