Quick and Delicious Chicken Fillet Recipes You'll Make Again and Again

There's something about a perfectly cooked chicken fillet that just makes dinner feel special, even on a busy weeknight. I've been cooking with chicken fillets for years, and I can honestly say they're one of the most versatile ingredients in my kitchen. Whether I'm in the mood for something creamy and comforting or light and herby, a good filé de frango recipe always delivers. Today I want to share two of my favorite ways to prepare chicken fillets — one baked with a rich white sauce and cheese, and one pan-seared with butter and fresh herbs. Both come together quickly, use simple ingredients, and taste like you spent way more time in the kitchen than you actually did. Let's dive in!

Stuffed Chicken Fillet with White Sauce and Cheese

This is my go-to recipe when I want something that feels restaurant-worthy but is actually pretty simple to pull off. The chicken fillets get stuffed with a savory filling, baked until golden, and then smothered in a creamy white sauce topped with melted cheese. It's comfort food at its finest, and the leftovers (if there are any) taste just as good the next day.

• 4 chicken fillets, pounded thin
• 150 g sliced ham or turkey breast
• 150 g shredded mozzarella cheese
• 2 tablespoons butter
• 2 tablespoons all-purpose flour
• 2 cups whole milk
• 1/2 cup heavy cream
• Salt and black pepper to taste
• Pinch of nutmeg
• Fresh parsley, chopped, for garnish

1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
2. Season the chicken fillets with salt and pepper, then place a slice of ham and a portion of mozzarella on each one. Roll them up and secure with toothpicks.
3. Arrange the rolls in the baking dish and bake for about 20 minutes, until the chicken is nearly cooked through.
4. Meanwhile, melt the butter in a saucepan over medium heat. Whisk in the flour and cook for one minute.
5. Slowly pour in the milk and cream, whisking constantly until the sauce thickens. Season with salt, pepper, and nutmeg.
6. Remove the chicken from the oven, pour the white sauce over the rolls, and sprinkle with the remaining mozzarella.
7. Return to the oven and bake for another 10–15 minutes, until bubbly and golden.
8. Garnish with fresh parsley and serve with rice or mashed potatoes.

Buttery Herb Chicken Fillets Ready in 30 Minutes

When I need dinner on the table fast, this is the recipe I reach for. The combination of butter, garlic, and fresh herbs creates an incredible flavor that pairs with just about anything. I usually serve these fillets with a simple salad and some crusty bread to soak up all that delicious pan sauce. It's proof that great food doesn't have to be complicated.

• 4 chicken fillets
• 3 tablespoons unsalted butter
• 2 cloves garlic, minced
• 1 teaspoon dried thyme
• 1 teaspoon dried rosemary
• Juice of half a lemon
• Salt and black pepper to taste
• Fresh parsley for garnish

1. Pat the chicken fillets dry and season both sides generously with salt and pepper.
2. Melt two tablespoons of butter in a large skillet over medium-high heat.
3. Add the chicken fillets and cook for 4–5 minutes per side, until golden and cooked through. Remove and set aside.
