Oven-Baked Chicken Legs with Potatoes: The Lazy Genius Dinner You'll Make on Repeat

Look, we all have that one dinner that saves us on chaotic weeknights — the one that requires zero culinary school diplomas, zero fancy equipment, and zero tears. For many of us, that dinner is oven-baked chicken legs with potatoes. It's the dish that says, "I cooked something real," while secretly being so easy it practically cooks itself. The oven does the heavy lifting, the potatoes soak up all the glorious chicken juices, and you get to stand there looking like a domestic hero. Throw in some rice and you've got a full-on feast that feeds a crowd, a family, or just you and your very enthusiastic appetite.

The Ultimate No-Fuss Chicken and Potato Situation

This is the kind of meal that makes your kitchen smell like a cozy Sunday afternoon, even if it's a random Tuesday and you're still in sweatpants. The chicken gets crispy on the outside, juicy on the inside, and the potatoes turn into golden little flavor sponges. Honestly, the potatoes might steal the show — fair warning.

• 6 chicken legs (drumsticks and thighs, whatever your heart desires)
• 4 medium potatoes, peeled and cut into wedges
• 4 garlic cloves, minced
• 3 tablespoons olive oil
• 1 tablespoon smoked paprika
• 1 teaspoon dried oregano
• 1 teaspoon salt (plus a bit more for the potatoes)
• ½ teaspoon black pepper
• 1 lemon, sliced
• 1 cup long-grain rice, for serving
• Fresh parsley, chopped, for that "I tried" garnish

1. Preheat your oven to 400°F (200°C). Yes, actually preheat it. We're not animals.
2. In a large bowl, toss the chicken legs with olive oil, minced garlic, smoked paprika, oregano, salt, and pepper until every piece is nicely coated.
3. Arrange the chicken in a large roasting dish. Scatter the potato wedges around them, drizzle with a little more olive oil, and sprinkle with salt.
4. Tuck the lemon slices in between the chicken and potatoes for a fresh, citrusy vibe.
5. Roast for 40–45 minutes, until the chicken is cooked through and golden and the potatoes are tender with crispy edges. Flip the potatoes halfway through so they don't get jealous of each other.
6. While the oven works its magic, cook the rice according to package instructions.
7. Serve the chicken and potatoes over a generous bed of rice, spoon over some pan juices, and sprinkle with parsley. Boom. Dinner is served.

Crispy, Juicy, and Ridiculously Satisfying

The beauty of this recipe is its flexibility. Got extra vegetables wilting in the fridge? Toss them in. Prefer thighs over drumsticks? Go for it. Want it spicier? Add chili flakes and embrace the chaos. The rice is technically optional, but it's really good at soaking up all those savory pan juices, so we recommend keeping it around. This is the kind of meal that tastes like effort but feels like a shortcut — the perfect trick to keep in your back pocket.

• Leftover chicken and potatoes keep well in the fridge for up to 3 days
• Reheat in the oven at 350°F (175°C) to keep the skin crispy
• Serve with a simple green salad if you're feeling virtuous
• A squeeze of fresh lemon before serving brightens everything up

1. Pat the chicken dry before seasoning — moisture is the enemy of crispy skin.
2. Don't crowd the pan; give everything room to breathe and brown.
3. Use a meat thermometer if you're anxious — chicken should hit 165°F (74°C).
4. Let the dish rest for 5 minutes before serving so the juices stay where they belong.
5. Save the pan drippings. Future you will thank present you.
