There is nothing gentle about cozido à portuguesa. It is a dish born of cold kitchens, long winters, and the stubborn belief that a meal should weigh you down like a stone. This is not delicate cuisine. It is a cauldron of boiled meats, cured sausages, and vegetables that surrender everything they have to the water. What follows is a grim inventory of the ingredients that make this Portuguese classic what it is — and a walk through the ritual of building it, step by heavy step.
The Traditional Assembly
The classic cozido is a monument to abundance and excess. Every pot is a grave of flavors, layered with cuts that demand hours of patience. The meats are not chosen for elegance but for endurance — they must survive the boil and still taste of something. The vegetables are humble, dense, and built to absorb. Nothing here is wasted, and nothing here is light.
- 500 g beef shank or chuck, cut into large pieces
- 300 g pork shoulder, bone-in
- 200 g smoked bacon or pancetta, in one slab
- 1 chouriço sausage
- 1 morcela (blood sausage)
- 1 farinheira (flour sausage)
- 1 pig's ear or trotter (optional, for the devoted)
- 2 medium potatoes, peeled and halved
- 2 carrots, cut into thick rounds
- 1 small turnip, quartered
- 1/2 head of green cabbage, cut into wedges
- 1 bunch of collard greens or kale, stems removed
- 1 onion, studded with 2 cloves
- 2 garlic cloves, crushed
- 1 bay leaf
- Salt and black pepper to taste
- Water, plentiful
A Vegan Shadow of the Same Dish
Even the meatless version carries the same dark weight. Here the pot is filled with legumes and plant-based substitutes that mimic the smoke and salt of the original. It is a ghost of the classic — familiar in shape, different in soul. The broth turns earthy and thick, and the vegetables still give up their strength to the water.
- 200 g dried chickpeas, soaked overnight
- 150 g seitan or firm tofu, cubed
- 2 vegan smoked sausages, sliced thick
- 1 vegan blood sausage substitute (optional)
- 2 medium potatoes, halved
- 2 carrots, thickly sliced
- 1 small turnip, quartered
- 1/2 head of green cabbage, in wedges
- 1 bunch of collard greens, chopped
- 1 onion, halved
- 2 garlic cloves, crushed
- 1 bay leaf
- 1 tbsp olive oil
- Salt and black pepper to taste
- Water, plentiful
The Slow Ritual of Cooking
There is no shortcut worth taking. The pot demands time, and the cook must give it. Follow these steps in order, and do not rush the boil.
- Soak the chickpeas overnight if preparing the vegan version; drain before use.
- In a very large pot, place the beef, pork, bacon, and pig's ear (if using). Cover with cold water by several inches.
- Add the clove-studded onion, crushed garlic, and bay leaf. Bring to a boil, then reduce to a steady simmer.
- Skim the grey foam that rises to the surface. This is the bitterness leaving the meat. Discard it.
- Simmer for 90 minutes, until the beef begins to yield to a knife.
- Add the chouriço, morcela, and farinheira. Continue simmering for 30 minutes. For the vegan version, add the plant-based sausages and seitan at this stage.
- Add the potatoes, carrots, and turnip. Cook for 20 minutes until just tender.
- Add the cabbage and collard greens last. Cook for 10 to 15 minutes — no more, or they will collapse into nothing.
- Remove the sausages and slice them thickly. Arrange the meats and vegetables on a deep platter.
- Ladle the dark, salty broth over everything. Season with black pepper. Serve without ceremony, and eat until the weight settles.
