Whether you are feeding a hungry family or meal-prepping for the week, this recipe delivers restaurant-quality results from your own kitchen. Let's get frying.

The Secret to That Signature Crunch

Golden crispy KFC-style fried chicken pieces piled on a plate

Achieving that signature extra-crispy texture comes down to two things: a well-seasoned flour mixture and a double-dredge technique. The first coating of flour and spices clings to the moist chicken, while a quick dip in buttermilk or an egg wash helps the second layer adhere and creates those craggy, crunchy ridges. Fry at a steady temperature so the crust turns deep golden without burning, and let the pieces rest on a wire rack so steam escapes and the coating stays crisp instead of turning soggy.

Ingredients You Will Need

2 pounds (about 1 kg) chicken pieces, bone-in and skin-on
2 cups all-purpose flour
1 cup buttermilk (or 1 cup milk mixed with 1 tablespoon lemon juice)
2 large eggs, beaten (optional for extra crunch)
2 teaspoons salt
2 teaspoons black pepper
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cayenne pepper (adjust to taste)
1 teaspoon dried oregano
1 teaspoon baking powder (for a lighter, crispier crust)
Vegetable oil for frying

How to Make Frango No Pote at Home

Fried chicken served in a convenient to-go pot ready for delivery

This recipe is designed for convenience, so the finished chicken can be tucked into a pot, box, or paper-lined container and still taste fantastic. Marinate the chicken ahead of time for deeper flavor, and fry in batches to keep the oil temperature steady. The step-by-step instructions below walk you through the process from seasoning to serving.

Pat the chicken pieces dry with paper towels and season generously with salt and pepper on all sides. For best results, let them sit in the refrigerator for 30 minutes.
In a large bowl, whisk together the flour, paprika, garlic powder, onion powder, cayenne, oregano, baking powder, and remaining salt and pepper.
In a separate bowl, combine the buttermilk and beaten eggs if using.
Dip each chicken piece into the buttermilk mixture, then roll it in the flour mixture, pressing firmly so the coating sticks. For an extra-crispy crust, dip and dredge a second time.
Place the coated pieces on a wire rack and let them rest for 10 to 15 minutes, which helps the coating set.
Heat about 2 inches of vegetable oil in a deep skillet or Dutch oven to 350°F (175°C).
Fry the chicken in batches, turning occasionally, for 12 to 18 minutes depending on the size of the pieces, until golden brown and cooked through to an internal temperature of 165°F (74°C).
Transfer the fried chicken to a wire rack or paper towels to drain excess oil.
Pack the chicken into a pot or container, close the lid, and shake gently to coat the pieces in their own steam and seasoning for that authentic frango no pote experience.
Serve hot with your favorite dipping sauces and enjoy.
