Fresh ingredients laid out for a whole roast chicken in the oven

Before you begin, assemble everything on your counter so the process flows smoothly. A whole chicken, a few aromatics, and a generous rub are all you need to create a deeply flavorful bird. Let the chicken sit at room temperature for about thirty minutes before roasting, and pat it completely dry — this is the secret to that coveted crackling skin.

1 whole chicken, about 1.5 to 2 kg (3 to 4 lbs), giblets removed
3 tablespoons olive oil or melted butter
1 tablespoon coarse salt
1 teaspoon freshly ground black pepper
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 lemon, halved
1 onion, quartered
4 garlic cloves, smashed
A few sprigs of fresh rosemary and thyme
1 cup chicken broth or water, for the roasting pan

Master the Oven Roasting Method for a Whole Chicken

Whole chicken roasting to a golden finish in an electric oven

Roasting a whole chicken in the oven is remarkably straightforward when you follow a clear sequence. The key is a hot initial blast of heat to render the skin, followed by a gentler finish so the meat stays moist. Basting with pan juices keeps everything succulent, and a short rest before carving ensures every slice stays juicy.

Preheat your oven to 220°C (425°F). Pat the chicken dry inside and out with paper towels.
Rub the entire bird with olive oil or melted butter, then season generously with salt, pepper, smoked paprika, and garlic powder, working some under the skin for extra flavor.
Stuff the cavity with the lemon halves, onion quarters, smashed garlic, rosemary, and thyme. Tie the legs together with kitchen twine for even cooking.
Place the chicken breast-side up on a rack in a roasting pan and pour the broth or water into the bottom of the pan.
Roast at 220°C (425°F) for 20 minutes to crisp the skin, then lower the heat to 190°C (375°F) and continue roasting for 40 to 50 minutes, basting occasionally with pan juices.
The chicken is done when a meat thermometer inserted into the thickest part of the thigh reads 75°C (165°F) and the juices run clear.
Remove from the oven, tent loosely with foil, and let it rest for 15 minutes so the juices redistribute.
Carve at the table and serve with the pan juices drizzled over the top.

Serve this golden bird alongside roasted vegetables, fluffy rice, or a crisp green salad, and let the pan juices do the rest. With its crackling skin and tender, aromatic meat, this whole roast chicken is destined to become a favorite in your kitchen.
