Crispy Fried Chicken with Fragrant Rice

This version focuses on achieving a deeply seasoned, crunchy exterior for the chicken while preparing a light, aromatic rice that balances the richness of the fried protein. The key is to season the chicken well in advance and keep the rice simple so the flavors remain distinct and harmonious.

2 cups of long-grain white rice
4 chicken thighs and 4 drumsticks
1 cup of all-purpose flour
1 teaspoon of garlic powder
1 teaspoon of smoked paprika
Salt and black pepper to taste
2 eggs, beaten
1 cup of breadcrumbs
Vegetable oil for frying
2 tablespoons of chopped fresh parsley
1 small onion, finely diced
2 cloves of garlic, minced
3 cups of chicken broth

Rinse the rice under cold water until the water runs clear, then set aside to drain.
Season the chicken pieces generously with salt, black pepper, garlic powder, and smoked paprika, then let them rest for 20 minutes.
Coat each piece in flour, dip into the beaten eggs, and press firmly into the breadcrumbs until fully covered.
Heat vegetable oil in a deep pan to medium-high heat and fry the chicken in batches until golden and cooked through, about 8 to 10 minutes per side. Drain on paper towels.
In a separate pot, sauté the onion and garlic in a little oil until soft and translucent.
Add the drained rice and stir for one minute to coat the grains.
Pour in the chicken broth, season lightly with salt, and bring to a boil.
Reduce the heat, cover, and simmer for about 18 minutes or until the rice is tender and the liquid is absorbed.
Fluff the rice with a fork, fold in the parsley, and serve alongside the crispy chicken.
