Golden, Craggy Copycat KFC Fried Chicken

This finished platter showcases the hallmark of a successful copycat: a deep amber, uneven crust with visible ridges and flakes that promise maximum crunch. The key to achieving this texture lies in a well-seasoned flour mixture, a buttermilk marinade that tenderizes the chicken, and a brief rest after dredging so the coating adheres firmly during frying. Serve the pieces hot, ideally alongside coleslaw, mashed potatoes, or warm biscuits, so the crust remains at its crispiest.

• 1 whole chicken (about 3 to 4 pounds), cut into 8 pieces, or 8 bone-in, skin-on chicken pieces
• 2 cups buttermilk
• 1 tablespoon hot sauce
• 2 large eggs
• 2 cups all-purpose flour
• 1 cup cornstarch
• 2 teaspoons salt
• 2 teaspoons black pepper
• 1 teaspoon smoked paprika
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1 teaspoon dried oregano
• 1 teaspoon dried thyme
• 1/2 teaspoon cayenne pepper
• 1/2 teaspoon ground ginger
• 1/2 teaspoon white pepper
• Vegetable oil, for frying (about 8 cups)

Step-by-Step Preparation and Frying Method

Frying in batches at a steady temperature is the most important variable for consistent results. The images above illustrate the desired color and crust density: deeply golden, textured, and dry to the touch rather than greasy. Use a heavy Dutch oven or cast-iron skillet to maintain heat, and allow the chicken to rest on a wire rack after frying so any excess oil drains away without softening the coating.

1. In a large bowl, whisk together the buttermilk, hot sauce, and eggs. Add the chicken pieces, ensuring each is fully submerged. Cover and refrigerate for at least 2 hours, or overnight for deeper flavor and tenderness.
2. In a wide, shallow dish, combine the flour, cornstarch, salt, black pepper, smoked paprika, garlic powder, onion powder, oregano, thyme, cayenne, ginger, and white pepper. Whisk thoroughly until the spices are evenly distributed.
3. Remove a few chicken pieces from the buttermilk mixture, allowing excess liquid to drip back into the bowl. Dredge each piece in the seasoned flour, pressing firmly so the coating clings. For an extra-craggy crust, dip the piece briefly back into the buttermilk and dredge a second time in the flour.
4. Place the coated pieces on a wire rack and let them rest for 10 to 15 minutes. This short rest hydrates the flour and helps the crust stay intact in the oil.
5. Pour vegetable oil into a deep, heavy pot to a depth of about 2 inches and heat to 325°F (163°C). Use a thermometer to monitor the temperature throughout frying.
6. Carefully lower 3 to 4 pieces into the hot oil, skin side down, without crowding the pot. Fry for 12 to 18 minutes, turning once or twice, until the crust is deep golden brown and the internal temperature of the thickest part reaches 165°F (74°C).
7. Transfer the fried chicken to a clean wire rack set over a baking sheet to drain. Sprinkle lightly with additional salt while still hot. Repeat with the remaining pieces, bringing the oil back to 325°F between batches.
8. Serve immediately, or hold in a 200°F oven on a wire rack for up to 20 minutes to keep the crust crisp before serving.
