Wok-Hearted Comfort: Portuguese Chicken with Cream & Mushrooms, Asian-Style

Imagine the gentle sizzle of a hot wok, the aroma of garlic and mushrooms rising like incense, and a silky cream sauce clinging lovingly to tender chicken. That is the spirit of this frango com natas e cogumelos — a beloved Portuguese classic reborn with an Asian soul. We borrow the harmony of umami from soy and oyster sauce, the warmth of ginger, and the gentle heat of white pepper, all while keeping the creamy, comforting heart of the original dish. The result is a one-pan meal that feels like a warm embrace after a long day — rich, savory, and deeply satisfying over steamed jasmine rice or crusty bread. Let us begin the journey, step by gentle step, and let the wok sing.

The Humble Beginning: Golden Bifes de Frango

Golden pan-seared chicken cutlets with creamy mushroom sauce in a rustic kitchen setting

Every great dish begins with the chicken. Here, thin cutlets — bifes de frango — are seared until golden at the edges while staying juicy within. This is the foundation of our flavor, the canvas upon which the cream and mushrooms will paint their story. Pat the meat dry, season it well, and let the pan do its quiet magic.

500 g chicken breast, sliced into thin cutlets
1 teaspoon soy sauce
1/2 teaspoon white pepper
1 tablespoon cornstarch
2 tablespoons neutral oil
1 thumb-sized piece ginger, julienned
3 cloves garlic, minced

In a bowl, massage the chicken with soy sauce, white pepper, and cornstarch. Rest for 10 minutes so the flavors sink in.
Heat the wok until a drop of water dances and evaporates. Add oil, then lay the chicken in a single layer.
Sear undisturbed for 2 minutes, flip, and cook 1 minute more until golden. Remove and set aside — the chicken will finish cooking later.
In the same wok, toss in ginger and garlic, stirring just until fragrant — do not let them brown.
Return the chicken to the wok, give everything a quick toss, and set aside while you prepare the sauce.

Silky Harmony: Cream, Mushrooms & the Asian Touch

Now comes the heart of the dish: a sauce that balances the velvet of cream with the earthy depth of mushrooms and the quiet hum of Asian seasoning. Sliced mushrooms soak up butter and soy, the cream flows in to soften everything, and a whisper of sesame oil at the end lifts the whole dish into something memorable. Finish with fresh herbs for brightness, and serve immediately while the sauce glistens.

200 g mushrooms (button or cremini), sliced
1 tablespoon butter
1 small onion, finely chopped
200 ml cooking cream (or heavy cream)
1 tablespoon oyster sauce
1 teaspoon soy sauce
1/2 teaspoon sesame oil
1/2 teaspoon white pepper
1 teaspoon cornstarch mixed with 2 tablespoons water
Fresh cilantro or spring onions, chopped, for garnish
Steamed jasmine rice, to serve

Melt butter in the wok over medium heat. Add onion and cook gently until translucent and sweet.
Add mushrooms and stir-fry until they release their moisture and turn golden at the edges.
Pour in oyster sauce and soy sauce, tossing so the mushrooms drink up the umami.
Lower the heat and pour in the cream. Stir gently and let it simmer for 3–4 minutes.
Return the chicken to the wok, nestling it into the sauce. Simmer for 5 minutes until cooked through.
Stir in the cornstarch slurry and cook 1 minute until the sauce coats the back of a spoon.
Finish with sesame oil and white pepper. Taste and adjust — a little more soy if needed.
Garnish with cilantro or spring onions and serve at once over steamed jasmine rice.
