Crispy Air Fryer Roast Chicken Recipe (Frango Assado na Airfryer)

There's something about a whole roast chicken that feels like a Sunday afternoon at home, even when it's a busy Tuesday. I used to think roasting a chicken meant heating up the whole oven and waiting an hour, but the air fryer changed all of that for me. These days, this crispy air fryer roast chicken is on heavy rotation in my kitchen. The skin turns out golden and shatteringly crisp, the meat stays juicy, and clean-up is almost nothing. If you've been looking for an easy way to get that classic roasted chicken flavor without the fuss, this is the recipe I keep coming back to.

Golden, Crispy Roast Chicken Straight From the Air Fryer

Golden roasted chicken with crispy skin prepared in an air fryer basket

This is the version I make when I want that picture-perfect bird without hovering over a hot oven. The air fryer circulates hot air all around the chicken, so every part of the skin gets that beautiful, even browning. I usually pick up a small whole chicken or a few leg quarters since they fit more comfortably in the basket. The key is patting everything dry before seasoning — moisture is the enemy of crispy skin — and giving it just enough time to really render that fat.

1 whole small chicken (about 2.5–3 lbs) or 4 bone-in chicken leg quarters
2 tablespoons olive oil or melted butter
1 tablespoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano or thyme
Salt and freshly ground black pepper to taste
1 lemon, cut in half (optional, for stuffing)
2–3 garlic cloves, smashed (optional)

Perfectly Crackling Skin With a Simple Rub

This second take is all about that crackling, almost pork-like crunch on the skin. I get there by drying the chicken really well, rubbing it with a little oil, and then seasoning generously so the skin crisps rather than steams. Don't skip the resting time at the end — it's what keeps the juices locked in while the skin stays crisp. I like serving this with roasted potatoes or a simple green salad, and honestly the leftovers make the best sandwiches the next day.

4 bone-in, skin-on chicken thighs or 1 small whole chicken
1½ tablespoons vegetable oil
1 tablespoon coarse salt
1 teaspoon smoked paprika
½ teaspoon black pepper
½ teaspoon dried rosemary or thyme
1 teaspoon lemon juice

Pat the chicken completely dry with paper towels — this is the most important step for crispy skin.
In a small bowl, mix the oil, salt, paprika, pepper, herbs, and lemon juice into a paste.
Rub the paste all over the chicken, working it into the skin and underneath where you can.
Let the chicken sit at room temperature for 15–20 minutes while you preheat the air fryer to 375°F (190°C).
Place the chicken in the basket in a single layer, skin-side up. If using a whole bird, make sure it fits without touching the heating element.
Air fry for 25–30 minutes for thighs, or 45–55 minutes for a whole small chicken, flipping or rotating the basket halfway through.
Check that the internal temperature reaches 165°F (74°C) in the thickest part, away from the bone.
Let the chicken rest for 5–10 minutes before serving so the juices settle and the skin stays crisp.
Serve hot with your favorite sides and enjoy that crackling skin while it's fresh.
