Crispy Frango a Passarinho Frito Recipe: Authentic Brazilian Fried Chicken Bites

Frango a passarinho frito is one of Brazil's most beloved bar snacks and family dishes, and for good reason. These small, bite-sized pieces of chicken are marinated with garlic and fresh lime, then deep-fried until deeply golden and shatteringly crisp. The name literally means "little bird chicken," referring to the small cuts of chicken—usually wings, drumettes, and thigh pieces—that cook quickly and stay incredibly juicy inside. Served with lime wedges and a bowl of garlicky dipping sauce, this dish brings the lively flavors of a Brazilian boteco right to your kitchen. Whether you are hosting a game-day gathering, a casual weekend lunch, or simply craving something crunchy and savory, this frango a passarinho frito recipe delivers restaurant-quality results with simple pantry ingredients. The secret lies in the marinade, which tenderizes the meat while infusing it with bright citrus and bold garlic notes, and in a double-fry technique that guarantees an unforgettable crunch.

The Perfect Golden Frango a Passarinho

This classic preparation highlights the beautiful golden-brown color and crunchy texture that make frango a passarinho so irresistible. The small chicken pieces are coated in a light, seasoned flour mixture that fries up into a thin, crispy shell while keeping the meat tender and flavorful. A squeeze of fresh lime right before serving cuts through the richness and adds a bright finish.

• 2 pounds (900 g) chicken wings and drumettes, cut into small pieces
• 4 cloves garlic, minced
• 2 limes, juiced (plus extra wedges for serving)
• 1 tablespoon coarse salt
• 1 teaspoon black pepper
• 1 teaspoon smoked paprika
• 1 cup all-purpose flour
• 1/2 cup cornstarch
• 1 teaspoon baking powder
• Vegetable or canola oil, for deep frying
• Fresh parsley, chopped, for garnish

1. In a large bowl, combine the chicken pieces with minced garlic, lime juice, salt, black pepper, and smoked paprika. Toss well to coat, cover, and refrigerate for at least 1 hour, or up to 4 hours for deeper flavor.
2. In a shallow dish, whisk together the flour, cornstarch, and baking powder until evenly combined.
3. Heat about 2 inches of oil in a heavy pot or deep fryer to 325°F (165°C).
4. Drain excess marinade from the chicken pieces, then dredge each piece in the flour mixture, shaking off any excess.
5. Fry the chicken in batches for about 6 to 8 minutes, until pale golden and cooked through. Transfer to a wire rack to rest.
6. Increase the oil temperature to 375°F (190°C) and fry the chicken a second time for 2 to 3 minutes, until deeply golden and extra crispy.
7. Drain on paper towels, sprinkle with a little extra salt, and garnish with fresh parsley. Serve immediately with lime wedges.

Easy Weeknight Frango a Passarinho

This streamlined version proves that frango a passarinho can be a fuss-free weeknight dinner option. With a shorter marinade time and a straightforward frying method, you can get crispy, flavorful chicken on the table in under an hour. It pairs beautifully with rice, farofa, or a simple green salad, and any leftovers are delicious cold the next day.

• 2 pounds (900 g) chicken wings, cut at the joints
• 3 cloves garlic, crushed
• 1 lime, juiced
• 1 1/2 teaspoons salt
• 1/2 teaspoon black pepper
• 1/2 teaspoon dried oregano
• 3/4 cup all-purpose flour
• 1/4 cup cornstarch
• Oil, for frying
• Lime wedges and hot sauce, for serving

1. Pat the chicken pieces dry and place them in a bowl with garlic, lime juice, salt, pepper, and oregano. Mix well and let sit for 20 to 30 minutes at room temperature.
2. Combine the flour and cornstarch in a shallow bowl.
3. Heat 2 inches of oil in a deep pot to 350°F (175°C).
4. Coat each chicken piece in the flour mixture, pressing gently so the coating adheres.
5. Carefully lower the pieces into the hot oil in small batches and fry for 8 to 10 minutes, turning occasionally, until golden and cooked through.
6. Remove with a slotted spoon and drain on a wire rack or paper towels.
7. Serve hot with lime wedges and your favorite dipping sauce.
