Fazer Sopa de Espinafres: The Creamy Green Hug Your Spoon Deserves

Let's be honest: spinach has a reputation problem. Popeye made it famous, but somewhere along the way it became the sad green pile people push around their plates. Enter sopa de espinafres, the Portuguese answer to every gray afternoon and every "I should probably eat more vegetables" promise you made in January. This soup is creamy, comforting, and secretly packed with greens, which means you can feel virtuous while basically eating a warm blanket. Whether you blend it silky-smooth or leave it a little rustic, this recipe is forgiving, fast, and almost impossible to ruin. Grab your biggest pot, put on something cozy, and let's turn a bunch of leaves into the best bowl of green you'll have all week.

The Light Version That Still Tastes Like a Treat

This version keeps things on the lighter side without turning the soup into sad green water. A potato does the heavy lifting for creaminess, so you can skip the cream without anyone at the table noticing. It's the perfect starter for a weeknight dinner, or a full meal if you add a toasted slice of bread and call it "croutons" with confidence.

2 tablespoons olive oil
1 onion, chopped
2 garlic cloves, minced
1 medium potato, peeled and cubed
4 cups fresh spinach, washed
4 cups vegetable stock
Salt and black pepper to taste
A pinch of nutmeg (optional, but very fancy of you)

Heat the olive oil in a large pot over medium heat and soften the onion for about 5 minutes until translucent.
Add the garlic and cook for 1 minute, just until it smells amazing and not burnt.
Toss in the potato cubes and stir so they get friendly with the onions.
Pour in the stock, bring to a boil, then lower the heat and simmer for 15 minutes or until the potato is fork-tender.
Add the spinach in handfuls, stirring until it wilts. This takes about 2 minutes, so don't wander off.
Blend until smooth with an immersion blender, season with salt, pepper, and nutmeg, and serve hot.

The Creamy Version That Feels Like a Hug

If the light version is a polite nod to healthy eating, this one is a full embrace. A splash of cream and a little butter turn the whole thing velvety and rich. It's the soup you make when someone needs cheering up, or when you simply believe dinner should feel like a small celebration. Serve it with crusty bread because dipping is not optional.

2 tablespoons butter
1 onion, finely chopped
2 garlic cloves, minced
1 large potato, cubed
5 cups fresh spinach
4 cups vegetable or chicken stock
1/2 cup heavy cream
Salt, black pepper, and a squeeze of lemon juice

Melt the butter in a pot over medium heat and cook the onion until soft and sweet, about 6 minutes.
Stir in the garlic and cook for another minute until fragrant.
Add the potato and stock, bring to a boil, then simmer for 18 to 20 minutes until the potato practically falls apart.
Pile in the spinach and cook until fully wilted, about 2 to 3 minutes.
Blend until completely smooth, then stir in the cream and warm through gently without boiling.
Season with salt, pepper, and a squeeze of lemon to wake everything up, then ladle into bowls and pretend you slaved for hours.

And there you have it: two ways to make sopa de espinafres, both green, both glorious, and both guaranteed to make you feel like a responsible adult who definitely eats enough vegetables. Freeze leftovers in portions, reheat gently, and pat yourself on the back. Your spoon is waiting.
