Doce de Leite Sem Leite: A Dark, Decadent Dairy-Free Recipe

There is something almost sinister about how good this doce de leite sem leite tastes. Rich, dark, and impossibly smooth, this dairy-free version of the classic Brazilian caramel spread proves that giving up milk does not mean giving up indulgence. Made with simple ingredients and a patient hand, it transforms ordinary pantry staples into a glossy, bittersweet paste that clings to a spoon like a shadow. Spread it on toast, swirl it into coffee, or eat it straight from the jar in the dark of night—no one needs to know. This recipe is unapologetically bold, deeply caramelized, and entirely plant-based.

Doce de Leite Caseiro Sem Lactose: The Homemade Darkness

This version leans into a slow, controlled caramelization that gives the spread its deep mahogany color and complex, almost smoky sweetness. Coconut milk and a touch of brown sugar replace the dairy, while a pinch of salt cuts through the richness. The result is a thick, velvety doce de leite that feels luxurious and slightly brooding—perfect for anyone who prefers their sweets with a little edge. Keep the heat low and your patience high; the darker it gets, the better it tastes.

• 2 cans (400 ml each) full-fat coconut milk
• 1 cup packed dark brown sugar
• 1/4 cup maple syrup or agave nectar
• 1/2 teaspoon fine sea salt
• 1 teaspoon vanilla extract
• 1 tablespoon cornstarch mixed with 2 tablespoons cold water (optional, for extra thickness)

1. Whisk the coconut milk, brown sugar, maple syrup, and salt together in a heavy-bottomed saucepan until smooth.
2. Place over medium-low heat and bring to a gentle simmer, stirring constantly to prevent scorching.
3. Reduce the heat to low and cook, stirring every few minutes, for 45 to 60 minutes, until the mixture darkens to a deep caramel brown and coats the back of a spoon.
4. If you want a thicker spread, stir in the cornstarch slurry during the last 10 minutes of cooking and continue stirring until glossy.
5. Remove from heat and stir in the vanilla extract.
6. Let cool completely in the pan—it will thicken further as it cools—then transfer to a sterilized glass jar and store in the refrigerator for up to two weeks.

Two Dark and Dangerous Dairy-Free Doce de Leite Methods

For those who want speed without sacrificing depth, this approach offers two routes to the same shadowy sweetness: a stovetop version for control and a pressure-cooker shortcut for the impatient. Both rely on coconut milk and a dark sugar base, and both deliver a spread that is thick, intense, and unapologetically dairy-free. Choose your weapon and let the caramelization begin.

• 2 cans (400 ml each) full-fat coconut milk
• 3/4 cup dark muscovado or brown sugar
• 1 tablespoon coconut oil
• 1/4 teaspoon salt
• 1 teaspoon vanilla extract
• For the pressure-cooker method: 1 sealed heat-proof jar and enough water to submerge it halfway

1. Stovetop method: Combine coconut milk, sugar, coconut oil, and salt in a saucepan over medium heat. Stir until the sugar dissolves, then lower the heat and simmer for 40 to 50 minutes, stirring often, until dark and thick. Stir in vanilla and cool.
2. Pressure-cooker method: Pour the same mixture into a sealed heat-proof jar, place it on a trivet inside the pressure cooker, and add water to come halfway up the jar. Cook at high pressure for 25 minutes, then allow natural release.
3. Carefully open the jar once cool enough to handle, stir in the vanilla, and transfer to a clean container.
4. Refrigerate until set—at least 2 hours—before serving. The spread will keep for up to two weeks in the refrigerator.
