Easy and Divine Creamy Spinach Soup

This version of creamy spinach soup is the definition of comfort in a bowl. With a smooth, silky texture and a delightful spinach flavor mellowed by cream and aromatics, it's proof that simple ingredients can create something truly divine. Serve it with crusty bread or a sprinkle of cheese on top for an extra touch of indulgence.

• 2 tablespoons butter or olive oil
• 1 medium onion, finely chopped
• 2 garlic cloves, minced
• 2 cups fresh spinach, well washed (or frozen spinach, thawed)
• 3 cups vegetable or chicken broth
• 1 cup heavy cream (or milk for a lighter version)
• 2 tablespoons all-purpose flour
• Salt and black pepper to taste
• Pinch of nutmeg (optional)
• Grated parmesan or croutons for serving (optional)

1. Heat the butter or olive oil in a large pot over medium heat.
2. Add the chopped onion and cook until soft and translucent, about 4 minutes.
3. Stir in the minced garlic and cook for 1 minute until fragrant.
4. Sprinkle the flour over the onions and stir well to coat, cooking for about 1 minute.
5. Gradually pour in the broth, stirring constantly to avoid lumps.
6. Add the spinach and simmer for 10 to 12 minutes until the leaves are tender.
7. Blend the soup with an immersion blender until completely smooth.
8. Stir in the heavy cream, season with salt, pepper, and a pinch of nutmeg, and heat gently without boiling.
9. Serve hot with parmesan or croutons if desired.

Quick and Simple Spinach Soup

Short on time? This quick and simple take on spinach soup gets you from stovetop to table in under half an hour. It's a fantastic way to use up fresh spinach and turn everyday pantry staples into a creamy, crowd-pleasing dish that everyone will love.

• 1 tablespoon butter
• 1 small onion, chopped
• 3 cups fresh spinach leaves
• 2 cups vegetable broth
• 1/2 cup heavy cream
• 1 teaspoon cornstarch dissolved in 2 tablespoons cold water
• Salt and pepper to taste
• Freshly grated cheese to finish

1. Melt the butter in a saucepan over medium heat and sauté the onion until soft.
2. Add the spinach and cook until just wilted, about 2 minutes.
3. Pour in the broth and bring to a gentle simmer for 5 minutes.
4. Blend until smooth using an immersion blender or stand blender.
5. Return the soup to the pot and stir in the cream.
6. Add the cornstarch mixture and simmer for 2 to 3 minutes until slightly thickened.
7. Season with salt and pepper, then serve hot topped with grated cheese.
