Cozido à Portuguesa is one of the most celebrated dishes in Portuguese cuisine, a hearty boiled stew that brings together an extraordinary variety of meats, sausages, and vegetables in a single, deeply flavorful pot. Its name simply means "Portuguese boiled," yet the dish is anything but simple. Each region, and often each family, has its own interpretation, but the essential ingredients remain remarkably consistent. Understanding these components is the key to preparing an authentic cozido à portuguesa at home, whether you are honoring a family tradition or discovering this cornerstone of Portuguese gastronomy for the first time.
Traditional Cozido à Portuguesa
The classic preparation of cozido à portuguesa relies on a careful balance of cured meats, fresh meats, and vegetables. The cured and smoked elements provide depth and salinity, while fresh cuts and legumes contribute body and texture. Cabbage, potatoes, and carrots form the vegetable foundation, absorbing the rich flavors of the broth as everything cooks together.
- 1 small Savoy or green cabbage, cut into wedges
- 2 large potatoes, peeled and halved
- 2 carrots, peeled and cut into large chunks
- 1 turnip, peeled and quartered
- 200 g (7 oz) pork shoulder or ribs
- 200 g (7 oz) beef chuck or brisket
- 150 g (5 oz) chouriço, sliced
- 100 g (3.5 oz) morcela (blood sausage)
- 100 g (3.5 oz) smoked bacon or pork belly
- 1 onion, halved
- 2 garlic cloves, crushed
- 1 bay leaf
- 1 can (400 g / 14 oz) chickpeas, drained, or 150 g dried chickpeas, soaked overnight
- Salt and black pepper to taste
- Olive oil, for serving
- If using dried chickpeas, soak them overnight in plenty of cold water, then drain.
- Place the fresh meats (pork and beef) in a large pot with the onion, garlic, and bay leaf. Cover with cold water and bring to a boil, skimming off any foam that rises to the surface.
- Reduce the heat and simmer gently for about 45 minutes, until the meats begin to tenderize.
- Add the smoked bacon, chouriço, and morcela, along with the chickpeas. Continue simmering for 20 minutes.
- Add the potatoes, carrots, and turnip, and cook for 15 minutes.
- Place the cabbage wedges on top, cover, and simmer for a final 10 to 15 minutes, until all vegetables are fork-tender.
- Remove the meats and sausages, slice them, and arrange on a serving platter with the vegetables and chickpeas.
- Strain the broth, season lightly with salt and pepper, and serve alongside the platter. Finish with a drizzle of olive oil.
Slow Cooker Cozido à Portuguesa
Preparing cozido à portuguesa in a slow cooker offers a convenient route to the same robust flavors, allowing the ingredients to meld over several hours with minimal attention. The layered approach keeps the vegetables from overcooking while the meats become exceptionally tender.
- 200 g (7 oz) beef chuck, cut into large pieces
- 200 g (7 oz) pork shoulder, cut into large pieces
- 150 g (5 oz) chouriço, sliced
- 100 g (3.5 oz) morcela, sliced
- 100 g (3.5 oz) smoked bacon, diced
- 2 large potatoes, peeled and halved
- 2 carrots, peeled and cut into chunks
- 1 turnip, peeled and quartered
- 1 small cabbage, cut into wedges
- 1 can (400 g / 14 oz) chickpeas, drained
- 1 onion, sliced
- 3 garlic cloves, minced
- 1 bay leaf
- 750 ml (3 cups) water or low-sodium stock
- Salt and black pepper to taste
- Layer the onion, garlic, and bay leaf at the bottom of the slow cooker.
- Add the beef, pork, bacon, chouriço, and morcela in an even layer.
- Arrange the potatoes, carrots, and turnip over the meats, then top with the chickpeas.
- Pour in the water or stock and season lightly with salt and pepper.
- Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the meats are tender.
- Add the cabbage during the final 45 minutes of cooking so it retains a pleasant texture.
- Remove the meats and slice them, then arrange on a platter with the vegetables and chickpeas.
- Serve with a ladle of the cooking broth and a drizzle of olive oil.
