The Ultimate Fried Chicken Wing Coxinha

Look at that gorgeous golden color — that's exactly what we're aiming for. This version focuses on the chicken wing itself, keeping the meat juicy while creating a thin, crunchy exterior. The key is a well-seasoned dough and a hot oil temperature that seals everything in. Once you nail these, you'll wonder why you ever bought them frozen.

2 lbs (900 g) chicken wings, drumettes and flats separated
2 cups all-purpose flour
1 cup whole milk
2 cups chicken broth
2 tablespoons unsalted butter
1 small onion, finely chopped
3 garlic cloves, minced
1 teaspoon smoked paprika
Salt and black pepper to taste
2 eggs, beaten
2 cups panko breadcrumbs
Vegetable oil for frying
Fresh parsley, chopped, for garnish

Spicy Chicken Coxinhas for an Extra Kick

If you like a little heat, this variation is for you. Adding a touch of chili flakes or hot sauce to the dough and filling gives these coxinhas a pleasant warmth that pairs beautifully with a cool dipping sauce. The method stays the same, but the flavor gets a delicious upgrade. Feel free to adjust the spice level to your taste — I usually go medium-hot, but you do you.

2 lbs (900 g) chicken wings, cooked and shredded
2 cups all-purpose flour
1 cup whole milk
2 cups chicken broth
2 tablespoons unsalted butter
1 small onion, finely chopped
3 garlic cloves, minced
1 teaspoon smoked paprika
1 teaspoon red chili flakes (or to taste)
1 tablespoon hot sauce
Salt and black pepper to taste
2 eggs, beaten
2 cups panko breadcrumbs
Vegetable oil for frying

In a large skillet, melt the butter over medium heat. Add the onion and garlic, and sauté until softened and fragrant, about 3 minutes.
Add the chicken broth and milk, then gradually whisk in the flour. Stir constantly until the mixture thickens into a smooth dough, about 5 to 7 minutes. Season with paprika, chili flakes, hot sauce, salt, and pepper.
Remove the dough from the heat and let it cool slightly until it's safe to handle. Meanwhile, shred the cooked chicken wings and set aside.
Take a small portion of dough (about 2 tablespoons), flatten it in your palm, and place a spoonful of shredded chicken in the center. Fold the dough around the filling and shape it into a teardrop or coxinha shape. Repeat with the remaining dough and filling.
Dip each coxinha into the beaten eggs, then roll in panko breadcrumbs until fully coated. For extra crunch, double-dip by repeating the egg and breadcrumb step.
Heat vegetable oil in a deep pot to 350°F (175°C). Fry the coxinhas in batches for 3 to 4 minutes, or until golden brown and crispy. Do not overcrowd the pot.
Remove with a slotted spoon and drain on paper towels. Garnish with fresh parsley and serve hot with your favorite dipping sauce.

There you have it — crispy, juicy fried chicken wing coxinhas made right at home. They're perfect for parties, snacks, or just because. Give them a try, and don't be surprised if they disappear before you can say "seconds." Happy cooking!
