How to Make a Delicious Chicken Curry at Home: A Simple, Comforting Recipe

There's something magical about a bubbling pot of chicken curry filling the kitchen with its warm, fragrant spices. I still remember the first time I made curry from scratch — I was nervous about getting the spice balance right, but the moment I tasted that creamy, golden sauce, I knew I'd found a dish I'd be making for years. This recipe is my go-to when I want something comforting but not complicated. It uses everyday ingredients, comes together in under an hour, and tastes even better the next day. Whether you're new to cooking curry or just looking for a reliable weeknight dinner, this one is for you.

A Rustic Chicken Curry That Feels Like Home

This is the kind of curry that doesn't need to look perfect — it just needs to taste incredible. The sauce clings to every piece of chicken, and the aroma of garlic, ginger, and spices fills the whole house. I love serving it over steamed rice with a squeeze of lime on top. It's humble, hearty, and deeply satisfying.

• 1.5 kg (about 3 lbs) chicken pieces, skin removed
• 2 large onions, finely chopped
• 4 garlic cloves, minced
• 1 tablespoon fresh ginger, grated
• 2 tablespoons curry powder
• 1 teaspoon ground turmeric
• 1 teaspoon ground cumin
• 1 teaspoon smoked paprika
• 400 ml (1 ¾ cups) coconut milk
• 2 tablespoons tomato paste
• 2 tablespoons vegetable oil
• Salt and black pepper to taste
• Fresh cilantro and lime wedges for serving

1. Heat the oil in a large pot over medium heat. Add the onions and cook for about 8 minutes until soft and golden.
2. Stir in the garlic and ginger and cook for one minute until fragrant.
3. Add the curry powder, turmeric, cumin, and paprika, stirring constantly for 30 seconds to toast the spices.
4. Stir in the tomato paste and cook for another minute.
5. Add the chicken pieces and turn them in the spice mixture until well coated.
6. Pour in the coconut milk and season with salt and pepper. Bring to a gentle simmer.
7. Cover and cook on low heat for 25–30 minutes, stirring occasionally, until the chicken is tender and cooked through.
8. Remove the lid and simmer for 5 more minutes to thicken the sauce slightly.
9. Taste and adjust the seasoning, then scatter with fresh cilantro and serve with lime wedges and rice.

A Creamy, Dreamy Curry You'll Make Again and Again

This version leans on coconut milk for richness, which makes the sauce velvety without any heavy cream. The tomato paste adds a subtle sweetness and depth, while the smoked paprika gives it a lovely warmth. I often throw in a handful of spinach at the end for extra color, and it works beautifully. Serve it with fluffy basmati rice, warm naan, or even crusty bread to soak up every last drop of that sauce.

• 1.5 kg chicken pieces
• 2 onions, chopped
• 4 garlic cloves, minced
• 1 tbsp grated ginger
• 2 tbsp curry powder
• 1 tsp turmeric
• 1 tsp cumin
• 1 tsp smoked paprika
• 400 ml coconut milk
• 2 tbsp tomato paste
• 2 tbsp oil
• Salt and pepper
• Cilantro and lime to serve

1. Cook the onions in oil over medium heat until golden.
2. Add garlic and ginger and cook for one minute.
3. Toast the spices with the tomato paste for about a minute.
4. Coat the chicken in the spice mixture.
5. Pour in the coconut milk, season, and simmer covered for 25–30 minutes.
6. Uncover and simmer five more minutes to thicken.
7. Finish with cilantro and lime, then serve hot with rice.
