How to Make Creamy Spinach Soup: A Comforting Step-by-Step Recipe

Spinach soup is one of those quietly wonderful dishes that feels both nourishing and indulgent at the same time. With its velvety texture, gentle green hue, and subtle earthy flavor, it makes a perfect starter for a dinner party or a warming lunch on a cool afternoon. This recipe walks you through two delightful approaches: a rustic, hearty version and a blended, creamy one. Both are simple to prepare, use everyday ingredients, and come together in under an hour. Whether you prefer a chunky soup with visible vegetables or a smooth, silky purée, you will find the method here. Grab a large pot, a good bunch of fresh spinach, and let's get cooking.

Rustic Spinach Soup with Potatoes and Onion

This first version is a comforting, homestyle soup where the spinach is roughly chopped and simmered with potatoes, onion, and garlic in a light broth. It is hearty enough to serve as a main course with crusty bread, and the chunks of potato give it a satisfying bite. The key is to wilt the spinach only briefly so it keeps its bright color and fresh flavor.

2 tablespoons olive oil
1 large onion, finely chopped
3 garlic cloves, minced
3 medium potatoes, peeled and diced
5 cups vegetable or chicken broth
1 large bunch fresh spinach, washed and roughly chopped
Salt and black pepper to taste
A pinch of nutmeg
Fresh lemon juice, to finish

Heat the olive oil in a large pot over medium heat. Add the onion and cook for 5 minutes until soft and translucent.
Stir in the garlic and cook for another minute until fragrant.
Add the diced potatoes and pour in the broth. Bring to a boil, then reduce the heat and simmer for 15 to 20 minutes until the potatoes are tender.
Add the chopped spinach in batches, stirring until it wilts, about 3 to 4 minutes.
Season with salt, pepper, and a pinch of nutmeg. Remove from the heat.
Ladle into bowls and finish each serving with a squeeze of fresh lemon juice and a drizzle of olive oil.

Velvety Blended Spinach Soup

If you love a silky, restaurant-style soup, this second version is for you. The vegetables are simmered until soft and then blended into a smooth, vibrant green purée. A splash of cream or coconut milk adds richness without overpowering the spinach, and the result is a gorgeous, elegant soup that looks stunning in a bowl with a swirl of cream and a few toasted seeds on top.

1 tablespoon butter or olive oil
1 leek, white part only, sliced
1 small onion, chopped
2 garlic cloves, minced
2 medium potatoes, diced
4 cups vegetable stock
2 large bunches fresh spinach, stems removed
1/2 cup heavy cream or coconut milk
Salt, white pepper, and nutmeg to taste
Toasted pumpkin seeds, for garnish

Melt the butter in a large pot over medium heat. Add the leek and onion and cook gently for 6 to 8 minutes until softened but not browned.
Add the garlic and cook for 1 minute more.
Add the potatoes and vegetable stock. Bring to a boil, then simmer for 15 minutes until the potatoes fall apart easily.
Add the spinach and cook for 3 minutes until fully wilted.
Remove from the heat and blend with an immersion blender until completely smooth.
Stir in the cream or coconut milk and season with salt, white pepper, and nutmeg. Warm gently without boiling.
Serve topped with toasted pumpkin seeds and an extra swirl of cream.
