How to Make Super Crispy Fried Chicken at Home (Easy Recipe)

There is something magical about biting into fried chicken that shatters with a crunch loud enough for the whole table to hear. I have spent years tweaking my recipe, burning a few batches along the way, and I finally landed on a method that delivers that golden, extra-crispy exterior every single time. The best part? You do not need a deep fryer or any fancy equipment. Just a heavy pot, a few pantry staples, and a little patience. Let me walk you through exactly how I do it in my own kitchen, with all the little tips that make a big difference.

The Secret to Restaurant-Style Crispy Chicken

Look at that golden crust. That is exactly the texture I aim for every time I fry chicken at home. The trick is a double coating and a buttermilk-style soak that helps the flour cling and creates those irresistible craggy bits. I also season the flour generously, because bland breading ruins the whole experience. Once you master this base, you can play with spices to match whatever mood you are in.

1 whole chicken, cut into pieces (or about 3 pounds of drumsticks and thighs)
2 cups buttermilk (or 2 cups milk mixed with 2 tablespoons lemon juice)
2 tablespoons hot sauce
2 cups all-purpose flour
1/2 cup cornstarch
1 tablespoon paprika
1 tablespoon garlic powder
2 teaspoons onion powder
1 teaspoon cayenne pepper (optional, for heat)
2 teaspoons salt, plus more for finishing
1 teaspoon black pepper
Vegetable or peanut oil, for frying

How to Fry Chicken That Stays Crispy

Crispy fried chicken fresh from the oil with a crunchy coating

Frying at the right temperature is everything. If the oil is too cool, the breading turns greasy and slides off. If it is too hot, the outside burns before the inside cooks through. I keep a thermometer handy and aim for 350°F. Letting the coated chicken rest for about ten minutes before it hits the oil also helps the flour hydrate and stick, which means fewer bald spots and more crunch.

In a large bowl, whisk together the buttermilk and hot sauce. Add the chicken pieces, cover, and refrigerate for at least 1 hour (overnight is even better).
In a wide dish, combine the flour, cornstarch, paprika, garlic powder, onion powder, cayenne, salt, and black pepper. Mix well.
Pour about 2 inches of oil into a heavy pot and heat to 350°F over medium-high heat.
Working with one piece at a time, lift the chicken from the buttermilk, letting excess drip off, then press it firmly into the flour mixture. Double-dip: return it to the buttermilk, then back into the flour for a thick, craggy coating.
Place the coated pieces on a wire rack and let them rest for 10 minutes so the coating sets.
Fry in batches, being careful not to crowd the pot, for about 12 to 15 minutes, turning occasionally, until golden brown and cooked through (internal temperature of 165°F).
Transfer to a wire rack or paper towels to drain. Sprinkle with a little extra salt while still hot.
Let rest for 5 minutes before serving so the juices stay inside. Serve warm and enjoy that crunch.
