The Secret to That Iconic Golden Crust

The magic of KFC-style chicken starts with the seasoning and the double-coating technique. A buttermilk brine tenderizes the chicken while infusing it with flavor, and the flour mixture — packed with paprika, garlic powder, onion powder, and a hint of cayenne — creates that craggy, ultra-crispy shell we all crave. Here's what you'll need to get started:

500g chicken strips or bone-in chicken pieces
2 cups buttermilk (or milk mixed with 1 tbsp lemon juice)
2 cups all-purpose flour
1 tbsp paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tsp black pepper
1 tsp salt
½ tsp cayenne pepper (adjust to taste)
1 tsp dried oregano
1 tsp dried thyme
Vegetable oil for frying

Follow these steps closely and you'll be rewarded with chicken that's crunchy on the outside, tender on the inside, and packed with that familiar fast-food flavor — minus the trip to the restaurant.

Marinate the chicken: Place the chicken pieces in a bowl, cover with buttermilk, and refrigerate for at least 2 hours (overnight is even better for maximum tenderness).
Mix the coating: In a large bowl, whisk together the flour, paprika, garlic powder, onion powder, black pepper, salt, cayenne, oregano, and thyme until evenly combined.
Heat the oil: Pour about 2 inches of vegetable oil into a deep skillet or Dutch oven and heat to 350°F (175°C).
Coat the chicken: Remove each piece from the buttermilk, letting the excess drip off, then press firmly into the flour mixture. For extra crunch, dip it back into the buttermilk and coat a second time.
Fry in batches: Carefully lower the coated chicken into the hot oil, frying 4–5 pieces at a time so the temperature stays stable. Cook for about 12–15 minutes, turning occasionally, until golden brown and cooked through (internal temperature of 165°F).
Drain and rest: Transfer the fried chicken to a wire rack or paper towel-lined plate to drain excess oil. Let it rest for 5 minutes before serving.
Serve and enjoy: Pair with coleslaw, biscuits, or fries, and dig in while it's hot and crispy!

And there you have it — restaurant-quality fried chicken made in the comfort of your own home. The blend of herbs and spices, the buttermilk soak, and that double-dredge are the keys to nailing that classic taste. Once you try this recipe, you might just skip the drive-thru for good. Happy frying!
