Steamed Chicken Thighs: A Fragrant Asian-Style Cozy Recipe

There is something deeply comforting about a pot of chicken gently simmering away with ginger, garlic, and a whisper of soy. This Asian-inspired take on coxa de frango cozida — steamed chicken thighs — transforms simple ingredients into a fragrant, tender dish that fills the kitchen with warmth. The low, slow heat keeps the meat juicy, while aromatics infuse every bite with savory depth. Serve it over steamed rice with a drizzle of the cooking broth, and you have a weeknight meal that feels like a gentle embrace. Grab your pot and let's begin.

Golden Simmered Chicken Thighs

Tender simmered chicken thighs in a rich golden broth with aromatic herbs

These thighs take on a beautiful golden hue as they simmer in a savory bath of ginger, garlic, and light soy sauce. The gentle poaching method keeps the meat succulent, and the broth becomes a flavorful elixir perfect for spooning over rice or noodles. A splash of sesame oil at the end adds a nutty finish that ties everything together.

6 bone-in chicken thighs, skin removed
4 cups water or light chicken stock
3 tablespoons light soy sauce
1 tablespoon Shaoxing wine (or dry sherry)
1 thumb-sized piece fresh ginger, sliced
4 cloves garlic, smashed
2 scallions, cut into segments
1 teaspoon sesame oil
1 teaspoon sugar
Salt and white pepper to taste

Rinse the chicken thighs and pat them dry. Season lightly with salt and white pepper.
In a deep pot, combine the water, soy sauce, Shaoxing wine, ginger, garlic, scallion segments, and sugar. Bring to a gentle boil.
Lower the chicken thighs into the pot, ensuring they are mostly submerged. Return to a simmer, then reduce the heat to low.
Cover and cook gently for 25 to 30 minutes, until the chicken is tender and cooked through. Skim any foam from the surface as it rises.
Turn off the heat and let the chicken rest in the broth for 5 minutes. Drizzle with sesame oil before serving.
Serve the thighs with steamed rice, spooning the fragrant broth over the top.

Easy Poached Chicken Thighs with Aromatic Broth

This second approach leans on the same gentle technique but keeps the broth light and clean, letting the natural flavor of the chicken shine. The ginger and scallion notes stay bright, and the poaching liquid doubles as a delicate soup base. It is a wonderful dish for a light lunch or a soothing dinner on a chilly evening.

4 bone-in, skinless chicken thighs
5 cups cold water
2 slices fresh ginger
2 scallions, halved
1 tablespoon rice wine
1 teaspoon salt
Pinch of white pepper
Fresh cilantro for garnish

Place the chicken thighs in a pot and cover with cold water. Bring to a boil over medium-high heat.
Once boiling, skim off the foam, then add the ginger, scallions, rice wine, salt, and white pepper.
Reduce the heat to low, cover, and simmer for 20 to 25 minutes until the chicken is tender and no longer pink at the bone.
Remove the chicken from the pot and let it rest for a few minutes before serving.
Strain the broth if desired, and serve alongside the chicken with a garnish of fresh cilantro.
Enjoy warm, with rice or noodles to soak up the delicate broth.
