Simple Fried Rice Balls: The Classic Approach

This first version keeps things refreshingly simple. Cooked rice is combined with egg, cheese, and a touch of flour to bind everything together, then shaped and fried until deeply golden. It's the kind of recipe you can throw together on a weeknight without a trip to the store, and it delivers that satisfying crunch every single time. Serve them hot with a dipping sauce or eat them straight from the plate.

2 cups cooked white rice, chilled
1 large egg
1/2 cup grated Parmesan or mozzarella cheese
2 tablespoons all-purpose flour
2 tablespoons chopped fresh parsley
1 small onion, finely grated
Salt and black pepper to taste
Vegetable oil for frying

In a large bowl, combine the chilled rice, egg, grated cheese, flour, parsley, and grated onion.
Season generously with salt and black pepper, then mix until the mixture holds together when pressed.
If the mixture feels too wet, add a little more flour, one teaspoon at a time.
With damp hands, shape the mixture into small balls or slightly flattened ovals.
Heat about two inches of vegetable oil in a deep pan to 350°F (175°C).
Fry the balls in batches, turning occasionally, for three to four minutes until golden brown and crisp.
Transfer to a paper towel-lined plate to drain, then serve immediately while hot.

Golden Fried Rice Balls with a Flavorful Twist

This second take adds a bit more depth to the filling. A combination of herbs, garlic, and a hint of smoked paprika gives the rice balls a richer, more aromatic profile, while a double-coating of breadcrumbs guarantees an extra-crispy shell. These are ideal for parties, game days, or anytime you want a snack with serious personality. The filling can be prepared a day ahead, making assembly quick and stress-free.

2 cups cooked white rice, cooled
1 large egg, beaten
1/3 cup grated cheese of your choice
1 clove garlic, minced
2 tablespoons chopped scallions
1 teaspoon smoked paprika
3 tablespoons all-purpose flour
1/2 cup breadcrumbs for coating
Salt and black pepper to taste
Vegetable oil for deep frying

Mix the cooled rice, beaten egg, grated cheese, garlic, scallions, smoked paprika, and flour in a bowl.
Season with salt and black pepper and stir until evenly combined.
Cover the mixture and refrigerate for 15 to 20 minutes so it firms up and becomes easier to shape.
Roll the mixture into uniform balls, then coat each one evenly in breadcrumbs.
Heat oil in a deep pot to 350°F (175°C).
Fry the coated balls in small batches for three to four minutes, turning until evenly golden.
Drain on paper towels and sprinkle with a little extra salt while still hot.
Serve with a dipping sauce of your choice and enjoy while crispy.
