Carne de Vaca Praia: A Dark Coastal Recipe for the Bold

There is a shoreline where the tide drags more than sand out to sea. Carne de Vaca Praia is not a dish for the faint of heart — it is a slow, brooding meditation on salt, smoke, and the patience of hunger. The name carries the weight of the coast: beef cooked the way fishermen cook when the sun has abandoned them and only embers remain. This recipe leans into that darkness, coaxing deep char and iron-rich flavor from simple cuts. It asks for time, silence, and a willingness to let the fire speak. Serve it without ceremony, preferably as the light fails and the wind picks up.

The coast at Praia de Carne de Vaca is a hard teacher. Salt air works its way into everything, and the fire here must be built low and shielded. The waves do not soften the mood; they sharpen it. Cook in this spirit — outdoors if possible, with the smoke drifting and the sea audible just beyond the flames.

The beef itself is the anchor. Choose cuts that can withstand long, unforgiving heat — chuck, short rib, or a thick hanger. The meat should be dark red, almost bruised, with fat that renders slowly and bastes the muscle from within. Trim little. The char is the point.

• 1.2 kg beef chuck or short rib, cut into thick blocks
• 4 cloves garlic, crushed into a rough paste
• 2 tbsp coarse sea salt
• 1 tbsp cracked black pepper
• 1 tsp smoked paprika
• 2 tbsp dark molasses
• 1 tbsp red wine vinegar
• 3 tbsp beef tallow or dark olive oil
• 2 onions, halved and charred
• 4 bay leaves
• 1 cup dark beer or black coffee

1. Pat the beef dry and let it rest uncovered until it reaches room temperature. Cold meat fights the fire.
2. Rub the garlic, salt, pepper, and smoked paprika into every surface. Work it in hard. Let it sit for at least an hour, longer if the air is cold.
3. Whisk the molasses and vinegar into a dark glaze and set aside near the fire.
4. Build a low fire and let it burn down to coals. Heat the tallow in a heavy pan until it shimmers and just begins to smoke.
5. Sear the beef blocks on each side until a deep, almost black crust forms. Do not rush this; each face needs its silence over the heat.
6. Scatter the onions and bay leaves around the meat, then pour in the dark beer or coffee. The liquid should hiss and rise as steam.
7. Cover tightly and let it cook low for 2.5 to 3 hours, turning once, until the meat yields under slight pressure but does not collapse.
8. Uncover, brush with the molasses glaze, and let the surface darken further over the coals for 10 minutes.
9. Rest the meat in its own juices for 15 minutes before cutting against the grain.
10. Serve with the charred onions and a spoonful of the reduced pan liquid. Eat slowly. Let the coast do the rest.
