Rich and Fudgy Brownies with Cocoa Powder: My Go-To Chocolate Fix
There's something about a pan of warm brownies cooling on the counter that makes a house feel like home. I've been baking brownies for years, and after plenty of trial and error, I've landed on a recipe that uses cocoa powder instead of melted chocolate — and honestly, I never looked back. Cocoa powder gives these brownies a deep, intense chocolate flavor, and it's a pantry staple I almost always have on hand. Whether you're craving a midnight snack, baking for a bake sale, or just want something sweet to share with the people you love, this recipe is a keeper. Let's walk through it together.
Why Cocoa Powder Makes These Brownies Special
These brownies come out rich, chocolatey, and wonderfully moist, with that signature crackly top I know you'll love. Using cocoa powder means you get bold chocolate flavor without the fuss of chopping or melting chocolate bars. It also makes the batter come together quickly, which is perfect for those days when you want homemade treats without spending hours in the kitchen.
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/2 cup chocolate chips (optional, but highly recommended)
- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
- In a large bowl, whisk together the melted butter and sugar until smooth and slightly glossy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, sift together the flour, cocoa powder, salt, and baking powder.
- Gently fold the dry ingredients into the wet mixture until just combined — don't overmix.
- Stir in the chocolate chips if you're using them for extra gooeyness.
- Pour the batter into the prepared pan and spread it evenly with a spatula.
- Bake for 22–25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Let the brownies cool completely in the pan before slicing into squares.
More Cocoa Powder Brownie Inspiration
This recipe is a wonderful starting point, but it's also incredibly forgiving and easy to tweak. Sometimes I add a swirl of peanut butter on top before baking, or sprinkle in some chopped walnuts for a bit of crunch. The key to fudgy brownies is pulling them out of the oven just before they look fully set — they'll continue to firm up as they cool. I like to serve mine slightly warm with a scoop of vanilla ice cream, but they're equally delicious at room temperature the next day. Give this recipe a try, and I have a feeling it'll become your new favorite way to satisfy a chocolate craving.
