Bifinhos de Frango com Cogumelos e Natas: A Creamy Portuguese Classic

Bifinhos de frango com cogumelos e natas is a beloved Portuguese dish that transforms simple chicken cutlets into a rich, comforting meal. Thin slices of chicken are seared until golden, then simmered in a velvety sauce of cream and mushrooms. The result is a dish that feels elegant enough for a weekend dinner yet remains wonderfully simple to prepare on a weeknight. This recipe guides you through two visual stages of the preparation, from the finished plate to the cooking process, ensuring a consistent and flavorful outcome every time.

Finished Bifinhos de Frango com Natas e Cogumelos

The completed dish showcases tender chicken cutlets coated in a glossy, ivory-colored sauce studded with sliced mushrooms. The cream clings to the meat, while the mushrooms add an earthy contrast. Serve it with rice, boiled potatoes, or crusty bread to absorb every drop of the sauce. This image represents the final goal: a harmonious plate where the sauce is thick enough to coat the back of a spoon but fluid enough to pool gently around the chicken.

• 600 g boneless, skinless chicken breasts or thighs, sliced into thin cutlets
• 300 g fresh mushrooms (button or cremini), cleaned and sliced
• 1 medium onion, finely chopped
• 2 garlic cloves, minced
• 2 tablespoons olive oil
• 2 tablespoons unsalted butter
• 200 ml heavy cream
• 100 ml dry white wine or chicken broth
• 1 teaspoon Dijon mustard (optional, for depth)
• Salt and freshly ground black pepper to taste
• Fresh parsley, chopped, for garnish
• Nutmeg, a small pinch (optional)

Preparing the Bifinhos with Cream and Mushroom Sauce

This stage captures the cooking process, where the chicken cutlets are browned and the mushrooms are sautéed before the cream is added. Proper heat control is essential: sear the chicken quickly over medium-high heat to develop color without drying it out, then lower the heat when adding the cream to prevent curdling. The mushrooms should be golden at the edges before the liquids go in, as this builds a deeper flavor base for the sauce.

• Paper towels for patting the chicken dry
• A large skillet or frying pan with a lid
• A wooden spoon or spatula for deglazing
• Warm serving platter

1. Pat the chicken cutlets dry with paper towels and season both sides generously with salt and pepper. Let them rest at room temperature for 10 minutes.
2. Heat the olive oil in a large skillet over medium-high heat. Working in batches to avoid crowding, sear the chicken for 2 to 3 minutes per side until golden brown. Transfer the seared chicken to a plate and set aside.
3. Reduce the heat to medium. Add the butter to the same skillet. Once melted, add the chopped onion and cook for 3 to 4 minutes until translucent.
4. Add the minced garlic and sliced mushrooms. Cook for 5 to 6 minutes, stirring occasionally, until the mushrooms release their moisture and begin to brown.
5. Pour in the white wine or chicken broth, scraping up any browned bits from the bottom of the skillet with a wooden spoon. Simmer for 2 minutes to reduce slightly.
6. Stir in the Dijon mustard if using, then pour in the heavy cream. Add a small pinch of nutmeg. Bring to a gentle simmer and cook for 3 to 4 minutes until the sauce thickens slightly.
7. Return the seared chicken cutlets to the skillet, nestling them into the sauce. Cover and simmer over low heat for 5 to 7 minutes, or until the chicken is cooked through and tender.
8. Taste the sauce and adjust seasoning with salt and pepper. Garnish with chopped fresh parsley and serve immediately with rice, potatoes, or bread.
