Arroz Frito con Verduras: A Bold and Smoky Vegetable Fried Rice Recipe

Arroz frito con verduras is the kind of dish that turns a handful of humble ingredients into something deeply satisfying. This version leans into a dark, savory profile: toasted sesame, soy, and a whisper of charred vegetables that give the rice its striking depth. It is quick, forgiving, and built for a hot wok or a heavy skillet that can take the heat. Whether you are cleaning out the fridge or planning a weeknight dinner that delivers on flavor, this vegetable fried rice rewards attention to a few simple details: cold rice, high heat, and a willingness to let the vegetables darken just enough.

Indian-Style Vegetable Fried Rice

This first approach brings a warm, aromatic character to the plate. Cumin and a touch of garam masala deepen the vegetables, while the rice picks up a golden-brown edge from a hot pan. The result is a bowl that feels robust and comforting, with each grain separate and lightly toasted. Use day-old rice if you can; fresh rice releases too much steam and turns sticky under high heat.

3 cups cooked basmati rice, chilled
2 tablespoons neutral oil
1 teaspoon cumin seeds
1 small onion, finely diced
2 cloves garlic, minced
1 teaspoon grated ginger
1 cup mixed vegetables (peas, carrots, corn)
1 bell pepper, diced
2 tablespoons soy sauce
1/2 teaspoon garam masala
Salt and black pepper to taste
2 scallions, sliced
1 tablespoon chopped cilantro

Heat the oil in a wide skillet over high heat until it shimmers.
Add the cumin seeds and let them sizzle for ten seconds.
Stir in the onion, garlic, and ginger, cooking until the onion edges darken.
Add the mixed vegetables and bell pepper, pressing them against the pan to char slightly.
Pour in the chilled rice, breaking up clumps with the back of a spatula.
Drizzle the soy sauce around the edge of the pan and toss to coat evenly.
Season with garam masala, salt, and black pepper, stirring for two to three minutes.
Fold in the scallions and cilantro, then serve immediately.

Oriental-Style Vegetable Fried Rice

The second version shifts toward a classic oriental profile, where soy sauce and a hint of toasted sesame oil define the flavor. The vegetables stay crisp, the egg adds richness, and the rice takes on a glossy, deep amber finish. Keep everything moving in the pan, and resist the urge to stir constantly once the rice hits the heat; a little stillness is what creates those darker, flavorful edges.

3 cups cooked long-grain rice, chilled
2 tablespoons vegetable oil
2 eggs, lightly beaten
1 small onion, sliced thin
1 cup broccoli florets, chopped small
1 carrot, cut into thin matchsticks
1/2 cup snap peas
3 tablespoons soy sauce
1 teaspoon toasted sesame oil
1/2 teaspoon white pepper
2 scallions, sliced

Heat one tablespoon of oil in a wok over high heat.
Pour in the beaten eggs and scramble quickly until just set, then transfer to a plate.
Add the remaining oil and stir-fry the onion, broccoli, carrot, and snap peas for two minutes.
Add the chilled rice and toss to combine, letting it sit briefly between stirs to develop color.
Drizzle the soy sauce over the rice and toss until evenly darkened.
Return the eggs to the pan and season with sesame oil and white pepper.
Fold in the scallions and serve hot.
