Arroz de Frango Receita: The Creamiest Chicken Rice You'll Ever Make (No Tears Required)

Listen, we've all been there: staring into the fridge at 7 PM with the enthusiasm of a soggy lettuce leaf, wondering what on earth to cook. Enter arroz de frango — Brazil's answer to "I want something comforting, but I also want to pretend I'm a chef." This dish is creamy, chickeny, and shockingly easy. It's the kind of recipe that makes people think you slaved over a stove for hours when really you just stirred things and looked confident. Grab your apron (or don't, we're not the apron police) and let's make some magic.

The Classic Crowd-Pleaser

Creamy Brazilian chicken rice served in a bowl with tender chicken pieces and fresh parsley

This version is the cozy classic — the one your grandma would approve of, assuming your grandma is cool with you using a food processor. It's rich, savory, and pairs beautifully with a nap afterwards. The chicken gets golden, the rice gets fluffy, and the whole thing comes together like a well-rehearsed dance number, minus the jazz hands. Serve it hot, garnish with something green so it looks like you tried, and accept the compliments gracefully.

2 cups white rice, rinsed and drained
500g chicken thighs, cut into bite-sized pieces
1 onion, finely chopped
3 garlic cloves, minced
2 tablespoons olive oil
1 teaspoon paprika
Salt and black pepper to taste
4 cups hot chicken broth
Fresh parsley, chopped, for garnish

Season the chicken pieces generously with salt, pepper, and paprika. Let them sit for a few minutes while you question all your life choices.
Heat the olive oil in a large pot over medium-high heat. Brown the chicken on all sides, then remove and set aside. Do not eat it yet. Patience.
In the same pot, sauté the onion until translucent, then add the garlic and cook for 30 seconds until fragrant.
Add the rice and stir to coat it in all that flavorful goodness. Toast it for about 2 minutes.
Pour in the hot chicken broth, return the chicken to the pot, and bring to a gentle boil.
Reduce the heat, cover, and simmer for about 18 minutes, or until the rice is tender and the liquid is absorbed.
Fluff with a fork, garnish with parsley, and serve immediately before someone else eats it all.

Summer of Creamy Dreams

Creamy chicken rice prepared quickly, topped with shredded chicken and rich creamy sauce

Now for the speedy, extra-creamy version — the one that hugs your soul and your taste buds simultaneously. This one uses a creamy sauce that takes the whole thing from "nice dinner" to "I might never order takeout again." It's fast, it's forgiving, and it's the perfect excuse to use that cream you bought for no reason.

2 cups white rice, cooked and kept warm
400g shredded cooked chicken
1 onion, chopped
2 garlic cloves, minced
1 tablespoon butter
1 cup heavy cream
1 cup chicken broth
1 cup shredded mozzarella cheese
Salt and pepper to taste

Melt the butter in a large skillet over medium heat and sauté the onion until soft and slightly golden.
Add the garlic and cook for another minute, enjoying the smell like it's a fancy candle.
Stir in the shredded chicken and cook for 2 minutes, letting it soak up all that flavor.
Pour in the heavy cream and chicken broth, then stir in the mozzarella until everything is gloriously melty.
Fold in the cooked rice and mix until every grain is coated in creamy goodness.
Season with salt and pepper, let it simmer for 3 minutes, then serve and bask in your own glory.
